If you are talking about an upside down pineapple cake, make a standard white cake batter, put a bit of pineapple extract in it, and take a can of pineapple slices) drained, put them on the bottom of the pan on top of a layer of waxed paper, then pour that cake batter over it. Level it out.
Bake @350 until it's baked. Test it with a knife stuck into the cake, it should come out clean if it's cooked.
Turn the cake OUT of the pan, upside down, take off the waxed paper, and you'll have the pineapple slices visible on top. Put some cherries in the middle of the pineapple slices, and serve preferably warm with whipped cream.

This pineapple chiffon cake is made with pineapple juice and egg yolks and whites, along with a little vegetable oil and other ingredients.
INGREDIENTS:
2 1/4 cups sifted cake flour
1 1/2 cups granulated sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup vegetable oil
5 egg yolks, slightly beaten
3/4 cup pineapple juice, unsweetened
8 egg whites
1/2 teaspoon cream of tartar
PREPARATION:
Into a mixing bowl, sift together the dry ingredients.
With a spoon make a well in the center of dry ingredients. Add the oil, egg yolks, and pineapple juice. Beat with an electric mixer until very smooth.
In a large mixing bowl, combine the egg whites and cream of tartar. Beat to very stiff peaks. Pour the first batter in a thin stream into the egg whites, gently folding in just until blended.
Pour into an ungreased 10-inch tube pan; bake at 325° for 55 minutes. Increase temperature to 350° and bake for 10 minutes longer. Invert pan and cool completely.

Lay your pinapple rings or chunks in a single layer across the bottom of a 13X9 cake pan. Cover lightly with brown sugar. Mix your cake mix like normal but use the pineapple juice in place of the water. Pour batter directly on top to pineapple in the pan. Pour just a little more of the juice on the top of the batter, maybe a 1/4 cup. Then bake like normal until sides just starting to pull away from pan.

Old Fashioned Pineapple Upside Down Cake
Ingredients
(8 servings)
3 cn (8.5 oz size) sliced pine- apple in heavy syrup (12 slices)
1/4 c Butter
2/3 c Light brown sugar, packed
1/3 c Pecan or walnut halves
1 c Flour
3/4 c Sugar
1 1/2 ts Baking powder
1/2 ts Salt
1/4 c Shortening
1/2 c Milk
1 Egg
1 c Heavy cream, chilled or
1 pt Vanilla ice cream
Instructions
1. Preheat oven to 350F. Drain pineapple slices, reserving 2 T of the syrup.
2. In a heavy 10 inch skillet (preferably cast iron) melt the butter over medium heat. Add brown sugar, stirring until the sugar is melted. Remove from heat. Arrange 8 pineapple slices on the sugar mixture, overlapping the slices slightly around the edge of the pan. Put one slice in the center. Place the walnut or pecan halves in the center of each slice of pineapple. Arrange around the inside of the skillet edge the remaining pineapple, cut in halves. Put pecans/walnuts in the center.
3. In a medium bowl, mix the flour, sugar, baking powder and salt. Add the shortening and milk. Beat 2 minutes at hight speed or until mixture is smooth. Add egg and reserved 2 T pineapple syrup. Beat two minutes more. Gently pour cake batter over the pineapple in the skillet and spread evenly. Be careful not to disarray the pineapple.
4. On a rack in the center of the oven, bake 40-45 minutes or until golden in color and surface of cake springs back to the touch. After the cake is done, let the skillet stand on a wire rack 5 minutes to cool slightly. With a small spatula, loosen cake from the edge of the skillet all around. Place the serving platter over the cake, and turn upside down (carefully). Shake gently.Lift off skillet.
Serve with fresh whipped cream or vanilla ice cream.

I make a pineapple cake using a yellow cake mix and add a large can of crushed, drained pineapple to it. After it is cool, I "frost" it with cool whip that I have mixed a small can of crushed, drained pineapple, My whole family loves it especially in the summer. It is very light and refreshing.

Pan Preparation
1/3 cup butter
1/2 cup brown sugar
Pineapple, sliced (canned)
Maraschino cherries
Pecan halves
1/2 teaspoon vanilla extract
Cake Batter
2 eggs
2/3 cup granulated sugar
6 tablespoons pineapple juice from fruit
1 cup sifted Gold Medal flour or Softasilk
1/3 teaspoon baking powder
1/4 teaspoon salt
Prepare the pan: melt butter in heavy cast iron skillet or baking dish. Sprinkle brown sugar evenly over butter. Arrange drained slices of pineapple over butter-sugar coating, and garnish well with maraschino cherries and pecan halves in the spaces.
Cake Batter: Beat eggs until thick and lemon-colored (5 minutes). Gradually beat in sugar. Add pineapple juice and vanilla extract.
Sift together flour, baking powder, and salt and beat into mixture all at once. Pour batter over fruit and nuts. Bake at 350 degrees F for 45 minutes or until wooden pick thrust into center of cake comes out clean. Immediately turn upside-down on serving plate. Do not remove pan for a few minutes; brown sugar mixture will run down over cake instead of clinging to pan.
Serve warm, plain, or with whipped cream.
Pineapple Rum Upside Down Cake
Yields: 4 to 6 servings
1/2 cup sifted all-purpose flour
1/4 teaspoon salt
1/8 teaspoon baking soda
1/4 cup butter (room temperature)
2 tablespoons butter
1/4 cup light brown sugar
1 tablespoon dark rum
1/2 cup granulated sugar or superfine sugar
1/2 teaspoon vanilla extract
1 egg
1/4 sour cream (room temperature)
1 (8 ounce) can pineapple slices
4 cherries, cut in half
Preheat oven to 350 degrees F.
Sift together flour, salt, baking soda; beat butter until creamy. Add sugar; beat. Add vanilla and egg. Beat until fluffy. Stir in half the flour mixture to moisten. Beat. Add sour cream. Beat. Stir in remaining flour mixture. Beat 30 seconds.
Melt butter in 9 x 5-inch loaf pan or small skillet. Blend brown sugar

put your pine apples on the bottom of the cake and flip it over when iis is done and get a yellow cake mix
