FRIED RICE
2 cups of cooked rice (brown or white)
4 strips of bacon or 1/2 cup of diced ham
3 eggs
Soy sauce to taste
Pepper to taste

Fry the bacon or ham; when the meat is done and crisp, remove it from the pan and add the rice. Fry the rice in the fat from the bacon or ham for a few minutes, until lightly colored and hot all the way through. Take the pan from the stove and add 3 raw eggs and the meat bits. Return to the heat and cook, stirring well, until the eggs are all mixed through and cooked. Season with soy sauce and pepper; remove from heat and serve. Serves 4
(Note: the great thing about this dish is that you can add almost anything you want to it -- different kinds of meat, mushrooms, onions, green pepper, even seafood -- add your "extras" when you are first cooking the meat, and then remove those ingredients to fry the rice and add them back in when you add the raw eggs. You can substitute the ham or bacon with any meat you like, but if it isn't a meat with much fat on it, just add a tablespoon of cooking oil to the pan to make sure nothing sticks.

Brown some chicken breasts with a little salt and pepper.

Cook or steam your rice.

Mix a 1 or 2 cans of Campbell's Mushroom or Golden Mushroom Soup in the rice. Save about a 1/2 can of the soup.

Spoon the rice mixture into a baking dish. You can add other goodies like onions, fresh mushrooms, scallions, fresh veggies, etc. if you like.

Place the browned chicken breasts on the rice mixture and pour the remaining soup over the chicken breasts.

Sprinkle the top with cheese or bread crumbs or both!!!

Cover with aluminum foil and let bake at 350 degrees for about 20-30 minutes

Delicious and Simple!!!

Chicken Risotto

Ingredients

(8 servings)

2 ea Zucchini, thinly sliced
2 c Skinned diced chicken,cooked
1/2 ts Thyme
3 c Cooked rice
2 ea Green onions, sliced
1/2 ts Salt
2 tb Chopped pimento
1/4 c Grated cheese


Instructions

Cook the zucchini and onions in small amount of water until tender, about 5 to 10 min. Add other ingredients, except for cheese. Cook and stir until heated through. Remove

Sticky Rice

This recipe describes the way to prepare the sticky rice you eat with your hand in a Thai restaurant. The sticky rice is actually a short-grain glutinous rice. It can be eaten with almost anything from eggs, meat, vegetables to soup. The Thais also used it in desserts and cakes.

1 1/2 cups glutinous rice (sticky rice)
water

Soak rice overnight in cold water, or for 15 minutes in boiling water if short of time.
Drain the rice, rinse and spread out on a wet cloth inside a steamer.
Cook over boiling water for 40 minutes, until rice is tender.

This is sooooo Good and I don't even have a name for it.

Cut up 3 boneless chicken breast into 1" cubes.
Cook the cubes in a little butter but do not brown them.
Add, 1 small box of frozen brocolli
Add, 1 small box of frozen cauliflower.
(You can cut both of these vegetables up a little if you'd like, I do)
2 cans of Creme of Chicken Soup.
Add water as needed.

Mix all ingredients and cook until vegetables are done.

Serve over rice!

If you like a sweet chicken, I brown frozen breast chicken in a pan with garlic salt and pepper until its brown on both sides. Then you take it out of the pan and cut it into cubes. Thrown it back into the pan and cook it till all the pieces are browned. On the side in a small bowl combine soy sauce one cup Aloha soy sauce (if kiko man and 1/2 cup sauce and 1/2 cup water) with 1/2 cup of sugar mix well then add it to the chicken and let simmer about 10 or so min. Taste really good with sticky rice and green beans. Hope you try it.

Why not go for a dutch indonesian rijsttafel ("rice table")? You use rice as the foundation, but then serve it with a couple of different kinds of curries and all kinds of fun and delicious toppings the guests can sample and add as they wish.... toasted coconut, chopped peanuts or cashews, raisins, chopped green onion, chopped hard boiled egg, chutneys... instant party!

I like Zatarain's Jambalaya in a box. $1.79/box Just add chicken (I prefer boneless, skinless breasts chunked up)or shrimp and you have a huge spicy (but not too spicy) meal. You could add all kinds of other things too if you wanted too. (I don't recommend using the sausage as it makes it too greasy.) Very good, quick and cheap!

Stir fry! Or Pork Fried Rice...Chicken Fried Rice...etc. if you want it to be the main dish.

make rice and add 1-2 jars of salsa and top off with some mexican shredded cheese godd wit many chineese and mexican dishes
