In beer the "head" goes down b/c of the oils from your skin. I'm sure this applies to soda as well.

It's the oil on your skin.
My friend rubs his forehead, then stick the same finger in his pop, and it goes down REALLY fast. Kinda gross, but it works.

Carbon Dioxide. I used to hall it by the Semi load. Contained at 300lbs per square inch as a liquid. It turns in to ice like snow when releases at a rapid rate........that's why it kind of takes you're breath away when its fizzing under your nose.....as for the chemical reaction with skin I cant tell ya.......
