SPINACH & CHEESE MANICOTTI
1 (10 oz.) pkg. frozen, chopped spinach
2 tsps. olive oil
2/3 cup chopped onion
2 cloves minced garlic
1 (15 oz.) container of ricotta cheese
1/2 cup fresh grated Parmesan, divided
2 egg whites
1/4 tsp. crushed red pepper (won't make it really spicy, but is okay to omit if you prefer to)
1/8 tsp. nutmeg
8 uncooked manicotti shells
2 & 1/2 cups of your favorite spaghetti sauce

Preheat oven to 375 degrees. Cook spinach according to pkg. instructions. Drain spinach, and press gently between paper towels to remove excess moisture. Set spinach aside. Coat a medium saucepan with cooking spray; add olive oil. Place over medium-high heat until hot. Add onion and garlic; saute 8 minutes. Transfer onion mixture to a bowl; add spinach, ricotta, 1/4 cup Parmesan cheese, egg whites, red pepper and nutmeg - stir well. Cook manicotti shells according to pkg. directions (they should be cooked, but firm enough to handle); stuff the shells with the spinach mixture. Spread 3/4 cup of the spaghetti sauce on the bottom of a 13"x9"x2" pan. Add the stuffed shells, then pour the rest of the spaghetti sauce over the shells. Cover and bake for 30 minutes. Right before serving, sprinkle the other 1/4 cup of Parmesan cheese over the sauce on top of the cooked shells. Hope you enjoy this!
