If it not appropriate to not touch a women whom thou right hand does not posess, what do you do when a female business associate (at an interview, meeting, etc.) reaches out to shake your hand, and not offend those who do not understand that it is out of respect that you do not shake their hand?

Is there legal recourse if you get fired for your behavior?

I don't know about legal aspect of this issue.
But as far as I would do, it is not a big sin to shake her hand, especially if your intention is good. If you really don't like that just try to explain the issue. And try to prevent your relationship from developing.
As prophet Mohammed said " Whoever leaves anything for sake of Allah, Allah will substitute him with something better in his faith and life"
Also from the Holy Quran " and do not APPROACH adultery,for it is a shameful (deed) and an evil, opening the road (to other evils). " chapter of Israa (17 ) , verse 32
Eventually, people should respect you for being a good man.
And Allah knows better.

You can bow instead. Most people would understand that you are doing that for a reason. You need to explain to your employer BEFORE hand, so he/she isn't surprised nor offended. They cannot fire you for that soecifically, however, it's really easy to fire people for any number of other reasons.

If you get fired for such a reason, that'd be discrimination.
Freedom of belief is guaranteed in every civilized society.
