Are there any online or book sources that deal with how to fight with maces, spears, and axes instead of the usual sword fighting things? I'm thinking European Middle Ages.

It's all the same concept... think of an axe as a stick. Just use a stick but remember you cant touch the stick part. The trick to weapons like that is to close the gap when they draw their swing back to strike.

Kung fu uses spears, axes and maces (ok, not so sure about the mace part). But if you learn fighting with these weapons in a KF style, you wouldn't be moving in a very European fashion. You'd obliterate your D&G playmates.

try traditional Chinese kung fu. they use traditional old weapons like axes and spears. since a mace is similar to a club or axe, kung fu should help you know how to use a mace.
