It just appears to be judged by eye - a skill acquired when you work in a chippie. You can, however, receive more or less than the standard portion. This simply depends on whether the server likes you or not.
Also, during times of the year when potatoes are more expensive, portions are reduced.

Chips...unhealthy?Here's some facts to set the record straight!

1 in 4 of all British Potatoes consumed in Britain are eaten as chips and the UK\'s 8,500 fish and chip shops sell over 277 million portions of chips per year.
An average serving of chips contains more than double the amount of fibre found in an average serving of brown rice or bowl of porridge. Plus, a 100g portion of oven chips contains just 4.2g of fat – that\'s less than a chocolate digestive at 4.3g fat, a small pot of natural yoghurt at 4.5g fat or a jam doughnut at 10.9g fat.
1 in 5 people eat fish with their chips. An average portion of battered cod & chips contains at least a quarter of the fat and a third fewer calories than a serving of either chicken tikka masala & pilau rice, or sweet and sour pork and egg-fried rice.

A 100g serving oven chips contains just 0.1g salt compared with 0.5g in a small packet of roasted peanuts, 0.5g in small bowl of cornflakes, 2.7g in a 200g can baked beans and 3.5g in a 300g can tomato soup.

You can get almost a third of your daily vitamin C from a portion of chips. A 100g serving of oven chips contains 12mg of vitamin C - that\'s double the amount of vitamin C in an apple.

A small portion of oven chips contains considerably fewer calories than a small bar of milk chocolate – 162 calories in the chips compared with 265 calories in the chocolate – and less than a third of the fat.

Thick chips absorb less oil than thin ones, so chunky chips are healthier.

An average portion of cod & chips contains at least half the fat and fewer calories than a serving of either chicken tikka masala & pilau rice, or sweet and sour pork and egg-fried rice.

Enjoy your chips!

I think you must be living in the USA. Here in N. Ireland the average Chinese take-away comes in two cartons, both 6 1/2 x 4 1/2 x 1 7/8 inches, one for the rice and one for the main course. If it's good, (rarely), I'll have no problem finishing both. (I'm pretty slim 5'6", 132 pounds). However, no matter what I order, it usually tastes the same, pretty disgusting, and comes in a luminous sauce. I bet the folks in China don't eat that sh*t. The normal price for such is around £5 (about 10 dollars). Fried rice lies heavier in the stomach than boiled and it is inadvisable to re-heat rice, (you can get a bad case of the trots), better in a salad and cold. When I was in the States I found the portions enormous. No wonder obesity is such a problem there!

I would say add up all the guesses and do an average... I would guess at 70 (with no scientific back up mind...)

don't eat chips - they are greasy, they are bad for you - they clog up your arteries like smoking does, they make you fat and slow and unhealthy so don't have them!
