There are lots of different brownie recipes, but they are all prepared similarly in brownie style: melted butter and chocolate, beaten eggs and sugar, a little flour. They are very quick and easy to whip together. The trick is not to overcook them - the resulting brownie should be moist, dense and chewy.
I've started with basic brownies here, along with lots of variations for different additions. Brownies are rich enough to go un-iced, some here have butter icings (which you can eliminate if desired). These brownies are great for snacks and lunches. Some have cheesecake type toppings which make them great for special desserts.

Ingredients:
1/2 cup butter
2 squares unsweetened chocolate
1 cup sugar
2 eggs, well beaten
1/2 teaspoon vanilla
3/4 cup flour
1/4 teaspoon salt
1/2 cup chopped walnuts
Directions:
Melt butter and chocolate together in a large saucepan. Remove from heat and stir in remaining ingredients.
Pour into a greased 8 inch square pan. Bake at 350 degrees F. for 25 to 30 minutes. Cool and cut into squares.

Nigella Lawson's is the absolute best Brownie recipe ever! - you have to try this!!!!! Ingredients 375 g soft unsalted butter 375 g best quality dark chocolate 6 large eggs 1 tablespoon vanilla extract 500 g caster sugar 225 g plain flour 1 teaspoon salt 300 g chopped walnuts Directions 1Preheat the oven to 180°C. 2Line your approximatley 33 x 23 x 5 1/2cm brownie pan with foil or baking paper. 3Melt the butter and chocolate together in a large heavy based saucepan. 4 In a bowl beat the eggs with the sugar and vanilla. 5 Measure the flour into another bowl and add the salt. 6 When the chocolate mixture has melted, let it cool a bit before beating in the eggs and sugar mixture, and then the nuts and flour. 7 Beat to combine and then scrape out of the saucepan into the lined brownie pan. 8 Bake for about 25 minutes. 9 When its's ready, the top should be dried to a paler brown speckle, but the middle still dark and dense and gooey. 10 Keep checking the brownies as they cook; remember that they will continue to cook as they cool. :)

Brownies (+)
Ingredients
- 1/2 cup butter or margarine, softened
- 1 cup white sugar
- 1 teaspoon vanilla
- 2 large eggs
- 2 ounces unsweetened chocolate, pre-melted
- 1/4 teaspoon salt
- 1/2 cup all-purpose flour
Directions
Preheat oven to 350 degrees.
Prepare baking pan with cooking spray.
In a large mixing bowl, cream butter/margarine with sugar and beat in eggs. Blend in chocolate. Stir in flour, salt and nuts.
Spread in prepared pan.
Bake 20-25 minutes or until just barely set in middle. Do not overbake. Cool on rack and cut.

BROWNIES
2 squares of unsweetened chocolate
1/4 cup of butter
1 cup of sugar
2 eggs, well beaten
1/2 tsp. salt
1 cup sifted all-purpose flour
1/2 tsp. double-acting baking powder
1 tsp. vanilla
1 cup chopped walnuts (optional)
Preheat oven at 350 degrees. Break up the chocolate and put the chocolate and butter in microwave and cook on high (100%) power one minute, then for 30 seconds at a time, stirring each time, until both are melted. Remove from microwave and add all other ingredients, mixing thoroughly. Spray non-stick cooking spray in an 8-inch square pan (bottom and sides), and pour the brownie mixture into it.
Bake for 30 minutes, let cool and cut into squares.

If you want any baked goods chewy instead of 'cakey and light' just add a bit more sugar, especially brown sugar, or some honey. Do NOT whip the dough up too much.
Don't forget the salt either, it tends to keep cooked ''dough" moist.

Peanut Butter Brownies
In a large mixing bowl combine
2 cups peanut butter
1 1/3 cup margarine
2 2/3 cups sugar
2 cups brown sugar
8 eggs
Stir in 1 Tbsp. Vanilla extract or Almond extract and add
4 cups all purpose flour
4 tsp. baking powder
1 tsp. salt
Spread evenly on a full size cookie sheet and bake at 350 for 45 minutes. Cool and coat with peanut butter icing.
