Because you've convinced yourself they are dead so it's emotionally impossible to accept seeing them rise up from anywhere.
Because dead people aren't supposed to move! Be afraid. You're normal. ;)

If the person were to arise out of his coffin, it means that he wasn't really dead in the first place.

Just "arising out of their coffin" would not make them "alive or mortal" again. Haven't you seen any zombie movies???? Perhaps any vampire movies??

Something like that happening doest seem to be realistic so if it did happen you would be afraid not expecting to ever happen. It is beyond what we know as mortal beings and our emotions are not wired for that kind of thing to happen. It is not a normal phenomenon as we know it.
If it happens do let us know and we can put you on Ripleys believe it or not!
