I love to cook, and the more the recipe is home-made, the better. I've got cookbooks and there are great websites for all kinds of recipes, but I'd like to have some "real" family recipes; those are ALWAYS the best kind! I'm not asking for secret family recipes -- just dishes you loved as a child that Grandma made, or your favorite dinner that Mom used to make -- those types of things. I truly appreciate all of you who have the time to pass these recipes
along to me (and I won't take the credit for them - I promise)!

Just a side note....I don't plan to write a cookbook or do any type of publishing of the recipes I'm given; these are just for my own kitchen and family!

I have a great recipe for Brocoli Cassarole lovers! This dish is hearty and rich. Most of the ingredients are already at hand. Heres what you'll need: 2 eggs; 1C Mayo; 2C shredded chedder (mild is preferred); 1 med. chopped onion; 1 can condensed brocholi cheese soup (not diluted); One medium bunch of fresh brocholi ( or 2 boxes frozen chopped brocholi 12-14oz. boxes); and 1 small can French's fried onions. These are the preperation steps:Preheat oven to 350 degrees. Cook brocholi according to directions on box or steam fresh brocholi. While the brocholi is cooking, mix all remainder ingredients in large bowl (all BUT the fried onions). Mix well (I usually don't add shredded cheese in until I'm ready to mix the drained brocholi because the heat melts the cheese and it blends easier and faster!) When brocholi is cooked, drain very well. If steamed fresh brocholi, chop into small dice sized pices) (...if the brocholi is not drained well, it can make the cassarole soupy).Add brocholi to mixed ingrediants and blend well. Pour mixture into typical glass cassarole dish (8 inch 1.5 Qt is perfect) and bake about 20-25 minutes or until top is golden- brown and bubbely. Add French's fried onions to the top of cassarole and return to oven for about five minutes or until fried onions are toasty. Allow to cool about 5 or so minutes and ENJOY! Let me know what ya think! ;)

Mexican Tom's Yankee Chili. My dad taught me this recipe when I was 10. It was the first thing I taught my 3 kids to cook. You can use any brands but, we like our brands. You can make it for under $10.00 and lasts a couple days. It is very good, quick and easy. Enjoy!

Mexican Tom's Yankee Chili

1 or 2 lbs. ground chuck (any ground beef)
One large coarsely chopped onion
1 large can whole tomatoes (cut up with juice)
2 cans Ranch Style Pinto Beans (one with jalapeno)
2 cans Ranch Style Beans
1 can Ranch Style Kidney Beans
1 regular size can Wolf Brand Chili (no beans) ( THIS IS THE SECRET INGREDIENT)...don't tell!
1 to 3 TBS. Gebhardt chili powder

Brown meat (garlic salt, pepper) and drain. Add all other ingredients one at a time stirring after each edition. Heat thoroughly and eat. Serve with saltine crackers or flour tortillas.

Home made egg noodles, 6 eggs and enough flour to make a stiff dough you can roll out , after you mix dough, take a baseball size clump and roll thin with rolling pin, ( it will look like pie crust) sprinkle flour between each, take 2 rolled out pieces roll them up and cut, let dry on counter. You can cook them with beef or chicken broth cook until tender about 20 min to 1/2 hr.

My fave was rice chicken casserole...
use boneless chicken, cook it on the stove
Rice, cream of mush, soup & sharp cheddar cheese.
cook the rice,
Mix rice and chicken, you can also add veggies if you like
put the mix on bottom of casserole dish, mushroom soup and a layer of cheese, as much as you like, bake in the oven until the cheese has melted and the c.o.m.s. is hot. Extra yummy.
