Deer Meatloaf Recipe
1 lb ground deer meat
1/2 lb lean sausage meat
3 slices soft bread, torn into pieces
1/2 cup onions, chopped
1/4 teaspoon pepper
1/4 teaspoon sage
1/4 teaspoon garlic salt
1 cup milk
1 1/4 teaspoons salt
1 egg
1/2 cup bell peppers, chopped
1/4 teaspoon dry mustard
1/4 teaspoon celery salt
1 tablespoon Worcestershire sauce

6 servings 1 meatloaf Change size or US/metric
Change to: meatloaf US Metric

1 hour 40 minutes 10 mins prep
Preheat oven to 350.
Mix all the above ingredients thoroughly. shape into a loaf
Bake for 1 1/2 hours or until done




Venison Salami

lbs ground deer meat
5 tablespoons Morton Tender Quick salt
2 1/2 teaspoons coarse black pepper
2 1/2 teaspoons garlic salt
2 1/2 teaspoons mustard seeds

20 servings 4 rolls Change size or US/metric
Change to: rolls US Metric

4 hours 15 minutes 15 mins prep
Mix well.
Cover with plastic wrap pushed down on meat mixture.
Refrigerate 4 days mixing well at least once a day.
On 4th day form mixture into long rolls, place on baking sheet.
Cook 225 F for 4 hours.
Wrap in plastic wrap and store in the refrigerator.


Awesome Beef Jerky!!!!!
1 cup teriyaki marinade
1/4 cup honey
2 packets Nesco jerky spice works, 1 packet is the cure which contains salt and sodium nitrate,to cure the meat,1 packet contains spice
1/4 cup sugar
2 lbs hamburger meat or ground deer meat, for those deer hunters
1 teaspoon paprika

mix the nesco jerky works packets,sugar,paprika, honey,and teriyaki sauce ingredients in a bowl mix well blended then put the hambuger meat into the sauce mix very well with hands until very mixed up then sit the meat in the icebox for 8 hours so the ingredients will be mixed inches.
Using the nesco jerky works kit to spread out the meat into strips of jerky using a food dehydrator set at high speed drying from 6 to 8 hours or depends on how thick the meat is.
after drying put into paper towels to drained off fat from the meat cool for about a hour and enjoy.


Venison Hot Dogs for the Grill Recipe

1 lb ground deer meat (ground)
1 lb pork butt (ground)
1/2 teaspoon sugar
3 1/2 teaspoons salt (mix sugar and salt into homemade cure)
1 cup water
2 teaspoons crushed garlic
2 teaspoons ground ginger
1/2 teaspoon pepper
1/2 teaspoon ground mace
casings, soaked in water for two hours and rinsed thoroughly (place casing end over tap and letting water run through)

1 hour 10 minutes 40 mins prep
Mix ingredients thoroughly and place meat mixture into food grinder gradually (This is better if you have two people).
Place casing end over stuffing tube and hold.
Turn grinder on and when casing starts to fill with air, stop machine and squeeze air out.
Tie end off.
Push meat thru steadily, filling casing.
Let sausage coil as you fill.
Gently pinch casing and twist 3-4 times.

You can use any recipe calling for ground beef, especially chili.
Or
Linda's Salami
5 # groung venison
5 tsp. Morton Tender Quick Salt
2 1/2 tsp. mustard seed
1/2 tsp. crushed red pepper
1 tsp. liquid smoke
2 1/2 tsp garlic powder
2 1/2 tsp. regular salt
2 tsp. course or cracked black pepper
Mix all the seasonings together and then mix with the meat.
Refrigerate for 24 hours. Mix again and refrigerate for another 24 hours. On the third day, mix well again and divide into 5 - 1# logs. Place the logs on a rack over a large cookie sheet or broiler pan. Bake slow 150 degree oven for 8-10 hours. Turn 3-4 times during the baking.

Venison Hamburger Rice Pie
1 lb Ground venison, browned and drained
½ cup Bread crumbs
¼ cup Green pepper, chopped
¼ cup Onion, chopped
2 cup Tomato sauce
2 ½ cup Cooked rice
½ cup Grated cheese
Salt and pepper to taste
1. Combine the venison, bread crumbs, green pepper, onion
and ½ cup of the tomato sauce in a large pie pan.
2. Mix the cooked rice, cheese, salt and pepper and 1 cup of the
tomato sauce.
3. Place the rice mixture on top of the venison mixture and
spread the remaining half-cup of tomato sauce over top.
4. Bake at 375 F for about 35 minutes.




Venison Shepherd’s Pie
3 cup Ground venison cooked (1 pound)
1 sm Onion, chopped
1 tsp Shortening
1 can Beef gravy
½ cup Diced cooked carrots
½ cup Diced lightly cooked celery
½ cup Peas
3 cup Mashed potatoes
1 tsp Chili pepper (optional)
1. Slightly brown the onion in shortening and then add gravy,
cooked venison, carrots, celery and peas.
2. Let simmer for 2 minutes and then pour into a 2-quart
casserole dish.
3. Spread the mashed potatoes on top.
4. Bake at 450 F

Use it like you do ground beef. Makes great chili. Try meatloaf but add a little ground sausage because deer meat is much leaner than beef and it will be dry.

2 lbs. chili beans 2 lbs. deer meat, ground or cubed 1 lb. sausage 1 block Baker's chocolate 2 lg. onions 1 pepper Chili powder 1 dash hot sauce (optional) Soak dry beans overnight; rinse well and cook. Cook all ingredients until beans are tender. Serves 8

I've used venison as I would beef. Hamburgers made with ground deer meat are delicious!

you can make burgers with them add a little bread crumbs and a egg to hold it together,cook like any other burger. add it to speghetti sauce, use as a encahalda filler, just subtatute it for beef basically good luck :) yum!!
