Here's one way I like to cook them. Pretty easy:
Melt 2 tablespoons butter or margarine
Add one minced clove of garlic
Add 1 teaspoon of:
crushed dried rosemary
dried whole thyme
Brush pork with butter mixture. Place on a rack in shallow roasting pan, fat side up. Insert meat thermometer into thickest part, avoid touching fat. Bake at 375 degrees until meat thermometer reads 160 degrees. (20-30 mins. per pound)
Combine 1/3 cup orange marmalade with
2 tablespoons of brandy and brush over roast.
Allow roast to cook until thermometer reads 170 degrees. (About 15-25 mins.)
Let roast stand for 10 mins before slicing.
There's an orange sauce that goes really well with this. It's easy. In a sauce pan, combine:
1 cup brown sugar and 1/2 cup orange juice, mix well.
Bring to a boil, reduce heat, and simmer until thickened, stirring frequently. Takes about 5 minutes to thicken.
Pour over sliced pork. Yum!

Pork Piccata
Serves 4
Recipe Ingredients:
1 lb. Farmer John® Carefree Cookin' Boneless Pork Loin
3 Tbs. Flour
1 1/2 tsp. Lemon Pepper
2 Tbs. Butter
1/4 cup Cream Sherry
1/4 cup Lemon Juice
4-6 thin Lemon Slices
1/4 cup Capers
Recipe Instructions:
1: Slice pork loin into 4 equal pieces. Pound cutlets thin (about 1/8 inch thick). Dredge lightly in flour and lemon pepper.
2: Melt butter in large skillet over medium-high heat. Quickly saute cutlets, turning once until golden brown (about 5 - 6 minutes). Add sherry and lemon juice to skillet. Shake pan gently and cook 2 - 3 minutes until sauce is slightly thickened.
3: Serve cutlets garnished with lemon slices and capers.

1 med to large pork loin
1 large onion sliced
1 table spoon chopped garlic
1/2 cup chopped cilantro
1-2 bottles beer ( enough to fully cover the meat)
salt & pepper (as you like)
1 teaspoon Italan seasoning
2 teaspoons of butter
Put all ingredeance in a large ziploc bag and leave all day in fridg
wrap in aluminum foil and bake at 350 for 90 min or (my favorite)
still in the aluminum foil put on BBQ turning every 15-20 min (check for doneness @ 60 min, you will be able to tell how much longer till done to your liking)

Slice the pork loin and put all in crock pot. Depending on how much you have, put a can (or 2 cans) of Cream of Mushroom soup in with a little salt and pepper. Put crockpot on low--come back in 8 hours and it's all done!

season it with salt and pepper, cover with foil then bake until its almost fully cooked. Open a can of Campbell's Cream of Mushroom then covered the meat, continue baking until the meat is fully cooked but tender. Served with a side of roasted vegetables and cranberry sauce.
Fast,easy and delicious!

do you have an injector...you could inject some marinated and then slow cook it in the over like at 250 until it is done...
