Up in Canada where that is made just as often as putting catsup on them, you just sprinkle some white or malt vinegar on fries, then salt them.
Now, if you want to know how to do it from start to finish:
Pick a medium starch potato (if you use baking potato, they'll go mushy and fall apart, and a waxy potato won't brown up or go soft in the middle. Something medium like a Yukon Gold is perfect for fries. For an interesting twist, get "viking" potatoes. The flesh is purple, but with your eyes closed, you can't tell them apart from normal ones.)
Cut the potato lengthwise into slabs, then cut into strips about 1/4 inch wide.
Rince the starch off the fries, then dry them off well.
If you're deep frying them, then you want to blanch the fried first. Pre-cook them with the oil at 350 until they soften, but do NOT cook them all the way. Pull them out of the oil, drain them and let them cool.
Then heat the deep frier up to 375 and cook them the rest of the way. This is how resteraunts who make their own fries do it.
If you're going to bake them in the oven, toss them in a bowl with a little bit of oil (something healthy like olive or peanut would be ideal) then spread them in an even layer on a pan and put them in the oven at 350 until they're brown. Keep in mind this will take longer than store bought fries as store bought ones are pre-blanched, so just need to warm up.
Either way, as soon as the fries come out, toss them with some sea salt. Not much. the purpose of this salt is to help draw out any excess oil from the fries, not to season them.
Serve them with some malt vinegar and sea salt.

FRIED VINEGAR CHIPS
Ingredients needed:
* 8 to 10 cups vegetable oil
* 6 cups very thinly sliced unpeeled red potatoes (about 2 pounds)
* 2 tablespoons white vinegar
* 1 teaspoon salt
Heat oil in a large deep-fryer or heavy pot over high heat to 365 degrees. Test to make sure it is hot before adding potatoes. When oil is hot, slowly add potato slices, separating them with a long handled, heatproof spoon, and fry for 2 minutes. Lower heat to medium and fry 3 minutes more, stirring to keep slices separate and frying evenly. Use a slotted spoon to scoop up potatoes into a wire-mesh strainer. Shake excess oil back into deep fryer, then spread potato slices on a baking sheet and let cool 10 minutes.
If you are also frying fish, prepare it now.
Make sure oil is hot. Add potatoes and fry for 1 minute. Reduce heat to medium and continue to fry potatoes until crisp and golden brown, about 6 minutes more. Remove potatoes with a slotted spoon and drain on paper towels. Serve immediately, sprinkled with vinegar and salt.
