Brunch Casserole Recipe

Ingredients:
1 pound lean ground beef
1/2 pound ground breakfast sausage
1 onion, chopped
2 tablespoons butter
2 cloves garlic, minced
6 ounces sliced mushrooms
1 teaspoon salt, or to taste
1/2 teaspoon nutmeg
1 package (10 oz.) frozen spinach thawed and squeezed dry
3 tablespoons flour
6 eggs, beaten
3/4 cup milk, scalded
1/2 cup shredded cheddar cheese

Directions:

In a skillet, lightly brown meats and onion in butter; drain excess fat and place meat mixture in a well-greased crockpot. Stir in garlic, mushrooms, salt, nutmeg, spinach, and flour. Beat eggs and milk together; pour over meat mixture. Stir well; cover and cook on low for 7-9 hours, or until firm. Sprinkle with shredded cheese 5 minutes before serving.

Cheese Souffle Recipe

Ingredients:
14 slices fresh white bread, crust removed
3 cups grated sharp cheese, Cheddar
1/4 cup butter or margarine
6 large eggs
3 cups milk, scalded
2 tablespoons Worcestershire sauce
1/2 teaspoon salt
Paprika

Directions:

Tear bread in small pieces. Place 1/2 in a well greased crockpot. Add 1/2 the cheese and 1/2 the butter. Add remaining bread, cheese and butter. Beat eggs, milk, Worcestershire sauce and salt. Pour over bread and cheese. Sprinkle with paprika. Cover and cook on low 4-6 hours. Do not open until ready to serve.

Spinach, Cheese, & Bacon Strata

INGREDIENTS:

* 4 cups sliced & buttered French bread, cubed
* 1 bag frozen spinach (16 oz)
* 6 to 8 ounces diced, cooked bacon, ham, or turkey ham
* 1 1/2 to 2 cups shredded cheddar cheese
* salt and pepper, to taste
* 1 can (10 3/4 oz) cream of mushroom soup
* 1/2 cup evaporated milk
* 5 eggs
* 1 tablespoon minced onion, optional

PREPARATION:
Lightly butter a 3 1/2-quart slow cooker. Layer with half of the buttered bread cubes, spinach, bacon, and cheese; salt and pepper to taste. Repeat layers ending with cheese. Whisk together the soup, milk, eggs, and dried onion.

Pour over slow cooker mixture. Chill for 1 hour or overnight. Cover and cook on low for 3 1/2 to 4 1/2 hours.
Serves 4 to 6.


Chicken Quiche

2 tablespoons corn oil
2 pounds chicken breasts, boneless and skinless
3/4 cup flour
3/4 teaspoon baking powder
1/2 teaspoon salt
1 cup evaporated milk
2 eggs, beaten
1 cup shredded cheddar cheese
2 tablespoons chopped onion
2 teaspoons dried parsley flakes

Coat crock pot with corn oil. Cook chicken on low 6 to 8 hours or on high 3 to 4 hours or until fork tender. Stir together flour, baking powder, salt, milk and eggs. The cheese, onion and parsley is then folded in. Pour mixture over chicken and cook 1 hour on High. Serves 6

I don't think that will work- sorry. I've never heard of anyone making a quiche in a crock pot.

I've never made it in a crock pot, but I have made it and it's always delicious! Email me for the recipe. Right now, It's not handy. But I'll find it later.
