INGREDIENTS:
1 (15 ounce) can pumpkin puree
1 (14 ounce) can sweetened condensed milk
2 egg yolks
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 egg whites
1 (9 inch) unbaked pie shell

2 tablespoons all-purpose flour
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
2 tablespoons butter, chilled
1 cup chopped walnuts

--------------------------------------------------------------------------------

DIRECTIONS:
Preheat the oven to 425 degrees F (220 degrees C).
In a large bowl, mix together the pumpkin, sweetened condensed milk, and egg yolks. Stir in 1 teaspoon cinnamon, ginger, nutmeg, and salt. In a large glass or metal bowl, whip egg whites until soft peaks form. Gently fold into pumpkin mixture. Pour filling into pie shell.
Bake for 15 minutes in the preheated oven. While the pie is baking, prepare the streusel topping: In a small bowl, combine the flour, brown sugar, and 1 teaspoon cinnamon. Blend in the cold butter with a fork or pastry blender until the mixture is crumbly. Mix in the chopped nuts. Sprinkle the topping over the pie.
Reduce the heat to 350 degrees F (175 degrees C). Bake an additional 40 minutes, or until set.

This is the pumpkin pie recipe we've been having since we were kids [35+ years ago]. Still loved by everyone today, and we usually end up fighting over the last piece. My step daughter [who swore she did NOT like pie] fell in love with this after one piece and keeps saying she can't wait until Thanksgiving, so she can have pumpkin pie! Try making it with homemade crust [I'll include an easy recipe] and don't forget either some whipped cream or cinnamon ice cream.

Nancy's Pumpkin Pie

Ingredients:
1 10 inch unbaked pie shell
2 whole eggs, slightly beaten
1 can Libby's Pumpkin [Libby's, Libby's, Libby's on the label, label, label, means you'll like it, like it, like it, on your table, table, table....anyone else remember that jingle? BTW, you could try other brands -- based on what you can buy/order in London.]
3/4 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon ginger
1/4 teaspoon cloves
1 1/2 cups heavy whipping cream

Mix eggs, pumpkin, sugar, salt and spices together, add the cream and whisk well. Pour into the pie shell. Bake in preheated oven, 425°F, for 15 minutes. Reduce heat to 350°F and continue baking for about 45 minutes. It is done when a metal knife inserted about 1 and 1/2 inches from the edge comes out clean.

Cool. Serve with a dollop of sweetened whipped cream on top.

Nancy's No Fail Pie Crust

Ingredients:
2 1/2 cups flour
1 cup butter
1 teaspoon salt
8 Tablespoons sour cream

Cut butter into flour salt. Add sour cream and quickly form into a ball. Refrigerate for one hour. Roll out, place in pie shell. Freeze.

I have a niece who goes to school in Ireland. She misses many of what we take for granted, such as boxed cake mix, etc. Her mother sends her whatever it is she wants. Do you know someone here who can send the canned pumpkin to you? There are many recipes, I make a pumpkin cream pie also, but not a recipe you find just anywhere. Other answerers are right, though, there is a recipe on the can.

Below is a link to foodnetwork.com. They have 48 recipes for Pumpkin pie (including pumpkin pie cookies, etc.). The traditional pumpkin pie recipe looks the best, like what I really eat for Thanksgiving.
Enjoy!

The recipie is on the back of both the pumpkin can and the condensed milk cans... Boiling pumpkin is a pain in the *** and it is hard to get it to come out good. Sweet potato pie is way better anyway. You're welcome!
