This is the true one. I think this Quote came before Quran was compiled. Brother look up in to some Hadith Books, ask Imam, or ask Islamic Scholar/Expart.

WHEN:
In makka, non Muslims were trying to stop Hazrat Muhammad S.A.W.W. to preach Islam. They (Non Muslims) complained with Hazrat Muhammad S.A.W.W.'s uncle Abu-Talib.

during the discussion with Abu-Talib, Hazrat Muhammad S.A.W.W. says those holy words.

WHY:
Hazrat Muhammad S.A.W.W. want to clear that he is true and very last prophet of Allah. Hazrat Muhammad S.A.W.W. doesn’t afraid from anyone if the Sun comes on hand or the Moon arrives at other hand. it has been taught that in worship or pray we will not accept any one except Allah.

When the Mohammad (PBUH) began to invite the meccans to Islam, the cheifs were very preplexed. One day, the cheifs went to the Prophet (PBUH)'s uncle Abu Talib and told him that "Your nephew says that our ansecstors were unguided and takes us as fools. He calls our gods lazy and tell us they are of no use. Tell him not to do it. If he dosn't listen to u, stop helping him. We'll tackle him ourselve."
Abu Talib po;itely shook them off but when his nephew came, he told him, "Don't weigh me so much that I can't carry it"!!

When Prophet heard this, he was distressed and that is when he said it. But the above isn't all right. He said

I swear by God! If they put the sun on my right n the the moon on my left hand I wouldn't leave saying the truth!!!! Leave me to my God or I'd die with it" When his uncle heard him, he knew his nephew was determined and could not be stopped.

As to why he said it, it is really very simple. It was his way to show that nothing would stop him from saying the truth.

Mohammad PBUH was a man of a mission and principle. His enemies tried to make a deal with him through his loving unbeliever uncle three years after he started his mission. They offered him to be their king, the wealthiest of them, and to choose the most beautiful women to marry, but he rejected all this and said the quote you listed. After that he and his followers were tortured to death but he maintained his mission until he completed it successfully.
