I heard that the screech is not caused by being pain but by some other biological function.

It is caused by heated gases escaping from their shell.

They don't. Lobsters do not have vocal cords and they communicate via pheromone. However, they do emit a squealing noise, which is the sound of the trapped seawater between the shell and the body escaping from the body as it heats up. Though it's a little more hands-on than boiling, here's the best way to make sure a lobster feels as little pain as possible: put the lobster belly-up on a cutting board, then insert a sharp, heavy knife into its midsection, between the legs. Immediately push down on the knife to split the lobster's head in half, then cook as planned or put it in the freezer before the big dunk!

That is the scream of joy... they love boiling water and being served up as the best available seafood.

Have a good dinner.

I'd think pain, but possibly a reaction of the exoskeleton (shell) as it hits the boiling water.

Well, ****.. if i were in that water id probably screech too.. but anyway.. i think its the pressure.. and heat..that causes they're breathing system to pull they'r bones into it causing a rip on they'r shell..........................No thats not really why i made it up.. but its a good guess aint it?

they don't yell, but that's because of all the water boiling them. The air seeps out of the body, causing a weird noise.
