Foolproof Hard-Boiled Eggs Recipe
From America's Test Kitchen. Really works!
3 large eggs
water
3 eggs
1. Place eggs in medium saucepan, cover with 1 inch of water, and bring to a boil over high heat.
2. Remove pan from heat, cover, and let sit for 10 minutes.
3. Meanwhile, fill medium bowl with 1 quart water and 1 tray ice cubes (or equivalent).
4. Transfer eggs to ice bath with slotted spoon and let sit 5 minutes.
5. Tap each egg all over against countertop to crack shell, then roll egg gently back and forth several times.
6. Begin peeling from air-pocket (wider) end.
7. The shell should come off in spiral strips attached to thin membrane.
8. Hard-boiled eggs can be refrigerated for several days.
9. You can double or triple this recipe as long as you use a pot large enough to hold the eggs in a single layer, covered by an inch of water.

I think when the eggs come to the boil that you only give them 6 minutes and you add the salt to stop the egg from cracking and not making the water hotter because you can't make water any hotter than boiling point which is 100 c

To prevent the eggs shells from breaking during cooking (you'll want them well shaped for deviled eggs) use the following method to allow the eggs to warm up gradually and not bounce around.
Cover the eggs with cool water and turn on the heat. When the water begin to full boil, remove and leave covered for 12 minutes.
Remove and rinse in cold water.
I usually do this because its easiest and most dependable.

Put the eggs in a pan, cover with cold water and put on the heat. as soon as the water comes to a full boil, turn off the heat and cover the pan. let is sit for 25-30 minutes and then run cold water over the eggs to stop the cooking. They will come out perfectly.
TRUST ME... this is the best way.

ten minutes after the water start to boil...dont forget to add about a tablespoon of salt. it makes the water boil at a higher temp. also, dont boil fresh eggs, if you use eggs that youve had for a week or so, the shells peel off much better.

Let eggs boil 2 minutes.
Remove pot from heat and cover for 11 minutes.
Place eggs in bowl filled with ice and water to stop the cooking process.
Yolks will be well cooked and and yellow w/no green outside ring.

I boil them for at least twenty minutes. Don't know why.. thats just te way my mom always did it. But more importanly (and I know you didnt ask this).. make sure the eggs are chilled well after hard boiling them. makes them sturdier for slicing perfectly and filling.
