2 Eggs
1 cup Granulated Sugar
1/2 Cup vegetable Oil
1 1/2 cups grated carrots, about 3-4 carrots
2 TBSP pineapple juice
1/2 cup chopped walnuts
1 1/4 cup flour
2 TSP baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
Cream Cheese frosting
1. Preheat oven to 350 degrees and grease and flower a 9 inch square baking pan
2. In a large bowl beat eggs and sugar until creamy
3. Stir in vegetable oil until well combined
4. add grated carrots, pineapple juice and walnuts, mix well
5. In a separate bowl combine flour, baking powder, salt cinnamon, and nutmeg, Mix Well
6. Add flour mixture to carrot mixture, stir until combined.
7. Pour into greased and floured baking pan and bake for 25-30 minutes or until toothpick inserted in the center comes out clean.
8. Allow to cool then frost with cream cheese frosting.

CARROT CAKE
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
1 3/4 cups white sugar
1 cup vegetable oil
3 eggs
1 teaspoon vanilla extract
2 cups shredded carrots
1 cup flaked coconut
1 cup chopped walnuts
1 (8 ounce) can crushed pineapple, drained
FROSTING
1 (8 ounce) package cream cheese, softened
1/4 cup butter, softened
2 cups icing sugar
12 servings
1. Preheat oven to 350 degrees F (175 degrees C).
2. Grease and flour a 9x13 inch pan.
3. Mix flour, baking soda, baking powder, salt and cinnamon; make a well in the centre and add sugar, oil, eggs and vanilla.
4. Mix with wooden spoon until smooth.
5. Stir in carrots, coconut, walnuts and pineapple.
6. Pour into 9x13 inch pan and bake for about 45 minutes.
7. Don't panic, the centre will sink a little.
8. Allow to cool; when cool, ice the cake.
9. You can certainly use your favourite cream cheese frosting to ice this cake, but the one I've included is highly recommended (I usually leave the cake in the 13x9 pan and just ice the top).
10. To make the frosting: Cream the butter and cream cheese until smooth; add the icing sugar and beat until creamy

DIRECTIONS:
In a medium bowl, combine grated carrots and brown sugar. Set aside for 60 minutes, then stir in raisins.
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 10 inch cake pans.
In a large bowl, beat eggs until light. Gradually beat in the white sugar, oil and vanilla. Stir in the pineapple. Combine the flour, baking soda, salt and cinnamon, stir into the wet mixture until absorbed. Finally stir in the carrot mixture and the walnuts. Pour evenly into the prepared pans.
Bake for 45 to 50 minutes in the preheated oven, until cake tests done with a toothpick. Cool for 10 minutes before removing from pan. When completely cooled, frost with cream cheese frosting.

Carrot Cake
Ingredients:
1.1 ½ cups of vegetable oil
2.2 cups of sugar
3.4 whole eggs; well beaten
4.2 cups of cake flour, sifted, then measured
5.2 tsp. baking soda, blended with flour
6.2 tsp cinnamon, blended with flour
7.1 tsp. nutmeg (freshly ground works best,) blended with flour
8.2 tsp. baking powder, blended with flour
9.3 cups of grated carrots
10.Pecans
Instructions:
1.Preheat oven to 350°
2.Grease, flour, and line with wax paper three 9-inch baking pans
3.Mix oil and sugar, beat well
4.Add eggs to mixture
5.(Add nuts, if using)
6.Add flour mixture GRADUALLY to oil mixture
7.Add carrots, slowly, small amount at a time
8. Pour blended mixture into cake pans and bake for one hour at 350°
9.Cool on rack
(For a 9x13 sheet cake, bake at 350° for one hour, or, for cupcakes, 20 minutes)
Icing Ingredients:
1.One 8 oz. package of room temperature cream cheese. It is VERY important that the cheese be at room temperature or else it will be lumpy!
2.1 stick butter
3.1 box confectioners sugar
4.2 tsp. vanilla extract
Instructions:
1.Beat all ingredients well
2.Spreads on cake and between layers.
3.Enjoy!

not a recipe, but instead of the white frosting, I use the coconut pecan glaze, like you put on a german choc. cake.
