Christmas time is tourist season in Cambodia. I knew a taxi driver there who told me his business picks up around christmas and slumps off in march when it starts getting hot. April and May are the hottest months.
Prices... You gotta bargain or you'll be charged 4 times the going rate. It helps to know someone who knows the prices. For example, in Phnom Penh, a pineapple, cored and eyed should sell for about 1000 Riel (25 American cents). A mango goes for 500 riel (about a 12 cents) when it's in season. And you can buy a meal from a street vendor for 2000 Riel (50 cents). You can go anywhere in the city by Moto taxi for 2000 Riel, though if they think you don't know prices they'll charge you up to 7 dollars for the same ride.
Siem Reap is more expensive as it is a tourist town. Bottled water was more like 2000 riel instead of 500 or 1000 in Phnom Penh.
I visited Siem Reap at Christmas time and it had plenty of people, but it was nothing like the crowds at Disneyland. Ankor Wat is such a big place that the crowds sort of spread out.

Mid November until early January...It is cooler and you should avoid rainy season. Sometimes rainy season gets a slow start (like this year) and may drag out a little longer. October is iffy. Hotel costs are basically the same and airfares bought in advance shouldn't be much higher. Remember you can fly to Siem Reap now from several destinations. VN, BKK, TW and a few others that escape my brain at the moment.

May, June, July, August and Sept. are the rainy months in S.E. Asia. Nov., Dec., Jan., Feb., and March are much nicer as far as the weather goes. But then again you have more tourist and ofcourse higher prices. October or March would be ideal.
Don't worry about prices too much. Even "high" prices here are much cheaper than what you have been accustomed to (if you live in the "West").
Also, don't give money to the beggars. Everybody wants to, and we do feel sorry for them. However, this just promotes more beggary. You give them money, you guarantee the next Westerns to be harrassed.

I was there late Oct..Nov. It was raining season but there was a plus side to it. It would down pour for about 10 minutes in the evening and it cooled everything off. So I didn't see the rain as a hinderence.
