It's carbonara, and it's pretty simple to make.
1 lb spaghetti
2 Tbsp. olive oil
4 oz. pancetta or slab bacon sliced into small strips
4 cloves garlic minced
2 large eggs
1 cup freshly grated pamesean
fresh ground black pepper
Make the sauce while the pasta cooks. It's important that the pasta is hot when you add the egg mixture, so that it cooks the egg.
Bring a pot of water to a boil, add pasta, cook 10 minutes, drain.Reserve 1 cup of the cooking water.
Meanwhile, heat the olive oil in a deep skillet, over medium heat. Add the bacon, saute for 3-5 minutes, add garlic, saute for less than a minute.
Add the hot drained spaghetti, and toss to coat the strands in bacon fat, 2 minutes. Beat the eggs and parmesean together, stirring well to prevent lumps. Remove the pan from the heat, and add the egg/cheese mixture whisking quickly, so that the eggs thicken, but do not scramble. Thin out the sauce with the reserved water, until it is the consistancy that you want. Add black pepper, and extra cheese, to your liking.
