Because it is hard to let go of a relationship. Instead of just telling her to leave you alone, have a nice conversation with her. Let her know exactly how you feel, but in a gentle way. Make sure you let her know that you understand how she feels, but that it was best that the two of you broke up. Even if you don't agree, at least let her know that you are understanding her feelings. If she starts stalking you, then I'd change my number. Lol!
