Typically you determine how many eggs you want per person (2 is pretty standard) and you break them into a mixing bowl. Add a touch of milk and then whisk a lot until they are fully whisked.
Then you pour them into a hot skillet and you keep them moving with a spatula while they heat up.
The skillet should have been sprayed with pam (or something similar) first.
Medium or a little higher is a good heat for scrambled eggs.
While you are mixing them, add salt and pepper to preferred taste (usually just a small sprinkle of salt and a double sprinkle of pepper).
That's it.
Hope this helps.

Well as a mere man, my way is to always do them in the microwave. I place two eggs ( per person ) into a microvaveable bowl ( normally a glass bowl ), add seasoning to taste, dash of milk and for a square of butter for a richer taste. Whisk in the bowl with a hand whisk only and then microwave on full power for 30 seconds only. Remove the bowl and whisk again to thoroughly mix the mixture which will have begun to set. Replace and cook for a further 15 seconds on high and remove and rewhisk. Keep repeating these steps until the eggs obtain a creamy texture ( to your liking ) and then serve. Remember that microwaved eggs continue to cook when removed from the bowl so err on the side of caution. Also remember that some people like their scrambled eggs creamy, others like them well set. You can't please everybody! Good luck ....

Place a knob of butter in a pan (skillet) on a medium heat.
While butter is melting, break eggs into a bowl, add 1 tbs milk or water per egg, add salt and fresh ground pepper and a dash of Worcestershire sauce. Mix with fork gently so as to break the yolks only.
Pour mixture into pan, lower the heat slightly and stir *constantly*. Just before the mixture solidifies, remove from the heat and continue stirring until the egg is all cooked.
The slower you cook it, the finer the crumbs will be.
An excellent way to prepare egg as a sandwich filling is to scramble as above and at the end add mayonnaise. Allow to cool before using as a filling with cress, bacon, tomato &c.

I'm a pro at it. You've already got the basic gist. crack 1.5 - 2 eggs per person (I usually do 3 eggs for 2 people). Add milk or half & half (about 1/8 of a cup) beat with fork or whisk, very well, about 4 minutes or so. I like to use good butter (an imported Irish butter) add to medium high small non-stick frying pan and keep turning the eggs while cooking, keep them moving and get them off the pan when you think its ready. If you've been moving them regularly, the consistency will be uniform throughout.

When you buy the eggs put them in a strong paper bag. When you cycle home have the bag of eggs in one of your pockets. Voila, eggs scambled. Don't bother to take out the broken shell, it's a good source of calcium. Squeeze as much as you can from the bag into a good thick bottom saucepan with some butter and milk continue to stir with a fork or whisk. Add some grated cheese if you like, with a good grinding of pepper.
Don't over cook as the scrambled eggs and shell or it will dry out.

Philadelphia Eggs: Melt Philadelphia with chives in butter in a frying pan. Add eggs while stirring with a fork or spoon. Add a sprinkling of mixed French spices (Oregano, Basil, Bay, Sage, Thyme) and salt. Fry until a bit firm and serve on a preheated plate. Add pepper only after serving (so not to ruin the color when mixing)

Add a little bit of milk, knob of butter, pinch of salt and beat eggs with a fork or whisk. The milk will make the eggs fluffy. You can cook in a frying pan. But it is possible to cook in the microwave in a non-metalic bowl if you do it that way remember to stir in between.
