one trick is when the cabbage is cut. sprinkle salt all over it no kidding. this will drain the natural juices from it. let it sit for about an hour. the natural juices are nasty after sitting for a while. drain.
rinse off with water. if you like onion cut up about 1/4 of an onion very fine don't want to get to big of an onion in a bite.
some carrots very finely cut. mayo salt and pepper to taste

Beer star, here is what I learned from my grandmother. She would shred cabbage and carrots and then take creamy italian dressing and mix it into the slaw then add salt to taste.(not too much though) and she would add honey to the batch to sweeten it alittle. You don't want it to be too strong with the salt or the honey because the will mess up th taste of the dressing. Mainly you want enough honey in it to grip peoples attention that they are eating something very delicouse and are drooling for more.
When grandmaother made this stuff I would give in deeply and the stuff never lasted very long when made because sweet coleslaw is too good to leave around.

I made this last week and it was SO good!
It has some unusual ingredients but they really work well together, tastes great!
*1 small head green cabbage
*1 carrot, shredded
*1 cup chopped red or yellow bell pepper
*2 green onions, thinly sliced
For the Dressing
*1/4 cup orange juice
*1 tablespoon fresh lime juice
*2 tablespoons chopped peanuts
*2 tablespoons sugar
*1 tablespoon chopped fresh cilantro
*1/2 teaspoon salt
*1/2 cup sour cream
*1/2 cup mayo

go to allrecipes.com and search for cole slaw. They're all rated so make sure to choose one that's rated the highest (4 or 5 stars). Also, they have reviews on them, too, which also help.

I use pre-packaged shredded cabbage and carrot mix, then I make dressing (for one small package mix) with about a cup of Miracle Whip (my kind of mayo, but you can use regular mayo), a couple of tablespoons of milk, and a bit of sugar to taste, more if you like it sweeter, obviously. I also like to add black pepper, but that's optional.

Cabbage, carrots, vinegar, sugar and mayonnaise. I am not sure the exact measurements of each but I would assume more mayonnaise than the sugar or vinegar. Try it out to taste and see for yourself.
