1 cup brown rice
1 small brown onion
1 or more cloves garlic (to taste)
1 can red kidney beans, rinsed
chopped fresh coriander (cilantro)
1 stock cube
cook the rice according to your usual method, but remove from heat about 5 minutes before fully cooked.
in frying pan with a little olive oil, fry onion and garlic until soft and slightly golden. Add stock cube, rice, beans and a little water (about 1/4 cup). simmer until most of the liquid is absorbed. Stir in chopped coriander (save a little for a garnish).
Serve. Fresh grind some sea salt over your serving.

Raw salad... IF you want you can add tuna or chicken.
Maybe smashed potatoes; smash potatoes, add cheese, butter and milk an put into the oven.
Maybe filled tomatoes, fill the tomatoes with vegetables and some pickles.
Maybe cheese sticks; envelope firm cheese cylinders into a spiced (salt, pepper, oregano, garlic) dough and then fry them.
Maybe pumpkin soup; get them soft and put them inside to a blender with some hot water and hot milk; add salt and spice and cheese according to your taste.

Tufo Cream Corn Soup.
Bring one cup of water to boil in a pot, add one can of Green giant cream corn and one tray of smooth tufo. Let it cook for 8 minutes. Turn heat down and enjoy!

what about eggplant Parmesan.
slice eggplant to desired thickness
dip slices in egg
then dip is Italian bread crumbs.
fry in olive oil until gold brown on both sides....top with you favorite pasta sauce and Italian blend shredded cheese and bake on 350 until sauce is heated through and cheese is melted.
this is good alone or with pasta.
i like to serve it with a mixed baby greens salad and bread.

When my in-laws were in town, we were always on the go. One of the things I served was some Lloyd's BBQ on hamburger buns. Delicious. It comes in a container (we got ours at Walmart) and you just warm it up. I served with it, corn on the cob, potato salad (again a container from walmart) and watermelon for dessert.

Pasta sauteed with garlic, veggies, in olive oil. Have a big green salad on the side. Eat bread.

macaroni and cheese - either from Kraft box or from scratch - a box of elbow macaroni, a packet of shredded 4 cheese Kraft cheese, a small pint of sour cream, salt, pepper, a dash of tabasco, and cook the macaroni and stir everything else in and stir until melted.

VEGATABLE STIR FRY/one of each red/ green /yellow / orange sweet peppers / mushrooms sliced saute in fry pan till tender. boil some spaghetti till cooked drain add to veggies add little soya sauce salt / pepper to taste
