This is really important to me and I have everythin g planned to the tee. People are offering to bring stuff. (food, drink, etc) I'm not sure what the proper etique is. I did not mention pot luck in the invitations so I don't want some people to bring stuff and make the others feel bad for not bringing something. Should I just say no to the people who offer or just let them bring it?

The polite thing to do would be to let people bring what they want and hope for the best that you don't get twenty versions of potato salad. Good luck.

A child turning a year old is a reason to celebrate, but don't overwhelm the baby with too many people. :) Let people know that it is not necessary to bring something, but if they want to don't discourage it either. Some people feel that it's necessary to bring something just to kind of contribute.

You said one really important thing--it's important to YOU. If you want a party for YOU, then throw one and see who comes. Your kid is 1 year old, probably won't enjoy all the ruckus, and will have a crappy time. Why don't you get real and just have some family and friends over and a cake, and put the baby down for a nap.
