Put a cracker in a glass of water. You will see the cracker expand and absorb the water. In an upset stomach, the acid inside your stomach is absorbed by the cracker. The acid then will be in the cracker and not on the walls of your stomach.

they are porous. Soaks up excess stomach acid. Also the simple carbohydrates are easy to digest. An empty stomach can have problems handling the acid you normally produce.
