Just roast them in the shells. Nice way to use a fire in the winter. When they brown, cool them and shell them They are kind of starchy.

Use the point of a paring knife to slash an X on the flat side of each nut, being sure to cut through the skin.

Bake in a single layer at 425 degrees F. for 10 to 15 minutes for peeling only. If you want them completely roasted, bake 15 to 25 minutes until tender. Stir nuts occasionally during the roasting time.

Always peel chestnuts while they're still warm. If they cool so much that the shell won't easily come off, reheat them briefly.

The old Christmas song, " Roasting chestnuts on an open fire-----", ====Sorry- being far from critical--- a simple charcoal BBQ on your back porch will work----poke each with a fork, wipe with a nice light olive oil, cover with foil, and when you smell the nutty steam, they're done------YUMMY

I don't. I buy them in a jar from William-Sonoma. They are cooked. Chop a few up, put them in your stove top stuffing and yummy, yummy, yummy!
