just treat them as a regular bean....just keep in mind the flavour and texture of the bean.....you can make a salad with it, pasta, a soup, you can dry the up and eat them.

chick peas are used to make hummus it is a vegetarian spead for an appetizer or as a sandwich. you put the chick peas in a food processer and puree them, then the addition of oil flavored with garlic or anypreferance you have is added. Like a holandaise sauce it can "break" the reason a food processor is used. some people have even used peanut butter to cut the taste a bit. They are also good in Salads

Curried Garbanzo Beans and Potatoes

Ingredients

(6 servings)

2 ts Vegetable oil
1/2 c Finely chopped onion
1 ts Curry powder
1/2 ts Ground cumin
2 1/2 c Water
1 c GrannySmith apple,peel+slice
1 cn Garbanzobeans,drained,15.5oz
1 c Diced yellow bell pepper
1 tb +1t all-purpose flour
1/2 ts Salt
1/4 ts Pepper
1 3/4 c Diced red potato
1 c Frozen green peas, thawed
6 c Hot cooked long-grain rice


Instructions

Heat oil in a large nonstick skillet over medium heat. Add bell pepper and onion; saute for 6 minutes or until tender. Sprinkle with flour and the next four ingredients. Stir well and cook for an additional 30 seconds. Add 2 1/2 cups of water and potato; reduce heat, cover and simmer 25 minutes or until potato is tender. Add apple, peas and beans; cover and cook an additional 10 minutes. Serve over rice. Serving size is 1 cup bean mixture and 1 cup rice.



Pasta & Garbanzo Beans With Roasted Vegetables
Yield: 6 Servings

Ingredients

5 red or yellow bell peppers
diced
2 fennel bulbs; cored and
diced (reserve minced tops
for garnish)
1 1/3 c diced canned tomatoes
drained
1 c chopped fresh basil of 1
1/2 tb dried basil
1 cooking spray
3 c cooked garbanzo beans (1 1/2
15 oz cans); rinsed
and drained
1/8 ts crushed red pepper
3 tb lemon juice or balsamic
vinegar
1 ts fennel seeds
1 1/2 lb rotelli or radiatore; cooked
(i assume this is pasta)
1/2 c grated fatfree parmesan
sonoma hard jack cheese or
soy parmesan
1 salt and pepper to taste

Instructions

Preheat broiler. Mix peppers, fennel bulb and some of the tops, tomatoes
and basil in a bowl; spread vegetables evenly over large baking pan.
Generously spray, broil until vegetables soften adn blacken slightly,
sirring occaisinally, about 15 minutes.

Combine beans, crused red pepper and lemon juice or bvinegar in a large
serving bowl. In a small pan, toast the fennel seeds until they darken a
few shades; add to the bean mixture.

Add boiled vegetalbles, hot pasta and cheese to bean mixture; toss well.
Salt and pepper to taste. Spinkle with reserved minced fennel leaves.



Spanish Garbanzo Beans
Yield: 1 Servings

Ingredients

1/2 c chopped onions
1 md green pepper; chopped
2 tb olive oil
8 oz tomato sauce
1 1/4 c cooked garbanzo beans

Instructions

Saut, onions and pepper in olive oil. Add tomato sauce. Cook over medium
heat for 5 minutes.

Add garbanzo beans. Cook over low heat for 15 minutes.



Hot Garbanzo Beans With Sun-Dried Tomatos
Yield: 1 Servings

Ingredients

2 tb olive oil
4 sun-dried tomatos,thinly
-sliced
2 garlic cloves,thinly sliced
1/2 md onion,thinly sliced
1/2 dried newmex pepper,stemmed
-and cru; shed (up to 1)
1 cn (16 oz) garbanzo beans
1 water
1 s & p to taste

Instructions

Heat the oil in a samll saute pan over med. heat. Add the sun-dried
tomatos, garlic, onion, and NewMex pepper and saute for 3 - 5 mins. (until
the onion begins to brown). Add the garbanzo beans and continue to saute
for about 5 mins, or until the garbanzos begin to brown. Add enough just
enough water to cover the garbanzo beans, then stir well. Reduce heat to
low and simmer for about 5 mins, or until the liquid is almost gone. Add
salt and pepper to taste and serve immediately. Serves 4.
