3 medium, firm green tomatoes
1/2 cup all-purpose flour
1/4 cup milk
2 beaten eggs
2/3 cup fine dry bread crumbs or cornmeal
1/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
3 bottles of your favorite wine

1. Gather ingredients.
2. Cut unpeeled tomatoes into 1/2 inch slices
3. Open first bottle of wine and pour yourself a glass.
4. Sprinkle slices with salt and pepper. Let tomato slices stand for 15 minutes. Meanwhile, place flour, milk, eggs, and bread crumbs in separate shallow dishes.
5. Drink glass of wine and pour another.
6. Heat 2 Tbsp of olive oil in a skillet on medium heat.
7. Polish off that glass of wine and pour another.
8. Dip tomato slices in milk, then flour, then eggs, then bread crumbs. In the skillet, fry half of the coated tomato slices at a time, for 4-6 minutes on each side or until brown.
9. Finish off that first bottle of wine and open second... get out a bigger glass and pour wine into it to the rim.
10. As you cook the rest of the tomatoes, add olive oil as needed. Don't forget to take a swig or two of that wine while you do so... you may need a few extra hands.
11. Season to taste with salt and pepper... and more wine.
12. Toss out those silly green tomato thingys and just open that third bottle of wine. Be sure to be comfy because the blissful blackness will probably take over any second now.

Fried Green Tomatoes

"These wonderful country-fried green tomatoes make a great side dish for summer!"
INGREDIENTS:
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon pepper
5 green tomatoes, sliced 1/2 inch thick
1 cup crushed saltine crackers
2 eggs, beaten
1/2 cup butter

DIRECTIONS:
1. In a small bowl, stir together the flour, salt and pepper. Place the crushed saltine crackers in another bowl, and the beaten eggs in a third bowl.
2. Melt the butter in a large skillet over medium heat. Dip each tomato slice in the egg to coat, then in the flour mixture. Dip the floured tomato slice back into the egg, and then into the cracker crumbs. Place the coated tomato slices in the hot skillet, and fry until golden brown on each side, about 3 to 5 minutes per side. Add more butter to the pan, if necessary. Serve hot!

The recipe is not listed on the site but it is from the original Whistle Stop Cafe portrayed in the movie "Fried Green Tomatoes." They have a cookbook you can purchase to get the recipe and some other good, old-fashioned cooking.

Fried Green Tomatoes

Makes 6 servings

Ingredients:

6 green tomatoes
1/2 cup buttermilk
1 cup panko
1/2 cup cornmeal
1/2/2 cup flour
1/2 cup grated Vella Dry Jack cheese (can substitute Parmesan)
1 1/2 teaspoon chipotle powder
1 1/2 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper
4 cups oil

Preparation:

Slice off ends of tomatoes and portion remainder into three slices per tomato. Place the buttermilk in a shallow bowl.

In another bowl mix together panko, cornmeal, flour, cheese, chipotle, paprika, salt and pepper.

In a heavy bottom skillet, heat oil up to 350 degrees. Place green tomatoes in buttermilk, allow excess buttermilk to fall free, and toss in flour mixture. Place tomatoes in oil and cook for 1 minute on each side, remove and season lightly with salt and pepper.

After frying all the tomatoes, place three on a plate and garnish with Arugula Pesto and Tomato Relish (recipes follow) and serve immediately.


Arugula Pesto

Ingredients:

1 tablespoon pine nuts
1 tablespoon walnuts
1/4 teaspoon minced garlic
1/2 cup extra virgin olive oil
1/2 cup arugula, packed
1 teaspoon lemon juice
1/4 cup grated Vella Dry Jack cheese

Preparation:

In a food processor place together nuts and grind into a fine dust. Add the garlic, olive oil, arugula and lemon juice and purée until all ingredients are incorporated. Remove from processor and work in cheese. Adjust seasoning as needed.

Tomato Relish

Ingredients:

1 pint cherry tomatoes, cut in half
1 tablespoon balsamic vinegar
1 clove garlic, minced
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil

Preparation:

In a separate bowl mix together cherry tomatoes, vinegar, garlic, remaining salt and pepper and olive oil.

I use a wet recipe. I start with flour then add seasoning salt, garlic powder a little lemon pepper and add milk until it's thick enough (but not too thick) to stick to the tomato slices (about a 1/4" thick) Then fried in oil until golden brown on both sides. Drain on paper towels and enjoy!

Cut and dry with paper towel. Dredge in a mix of flower, some salt and pepper, fry in medium to hot oil until golden brown...will be sour and taste great...good green tomatoes need very little help. Same thing for sliced mushrooms..just make sure you blot dry them so the flower will stick. good luck

Batter the sliced green tomatoes with a mixture of one part flour to three parts corn mill. dip tomatoes in milk and then in mill mixture and put in hot oil that has heated in a cast iron skillet. cook on both sides until golden brown. In my part of the country we call them fried green maters and eat them with a glass of buttermilk.

The recipe my mom always uses and taste so good is simple.....simply make a water and flour batter...salt and pepper it. Saute them in butter slowly. Take them out.. and if it like our house.. they hardly get cooled enough to eat.. YUM!
