THREE POTATO SALAD
4 large yellow potatoes, peeled and cubed
5 medium red potatoes, scrubbed and cubed
1 large sweet potato, peeled and cubed
1 small onion, minced
1 rib celery, chopped small
3-4 hard boiled eggs, peeled and chopped
1-1/2 cup mayonnaise
1-1/2 cup sour cream (can add more if the potatoes seem to soak up the dressing and need more)
1 T mustard
1 T sugar
1 T salt (to taste)
1 T pepper (to taste)
Boil potatoes til tender with 1 T vinegar in the water (keeps them from discoloring) and a large spoonful of salt. Drain and cool.
Mix together mayo and sour cream. Add mustard, sugar, salt and pepper.
Add eggs, celery, onion to the potatoes. Stir in mayo/sour cream dressing. Add milk if it's too dry. Adjust seasoning. Refrigerate several hours to overnight. It's awesome!

My mom makes the best potato salad. First off she will only use Best Foods mayo, (Hellmans if you are in the south.) Second she boils the potatoes whole, lets them cool, then slips the skins off and cuts potatoes into cubes. Add a tablespoon French's mustard with the mayo. She uses both sweet and dill pickles, celery, black olives and onion chopped very fine. Add salt and pepper and celery salt or seed to taste. Top with sliced boiled egg and a spinkle of paprika.

Boil 5 medium red potatoes in their skins. Drain and cool slightly. Remove skins; cut into cubes. Chop a small onion, mix with potatoes. Mix 1/4 cup vinegar and 1/4 cup oil with 1 tsp salt, 1/4 tsp. pepper, and 1/2 tsp. dried parsley. Pour over potatoes & onions. Stir well. Refrigerate 2 hours, stirring occasionally. 1/2 hour before serving, mix in your preferred amount of mayonnaise (REAL mayonnaise). If you like, you can add two or three chopped hard-boiled eggs to this salad.

Dill Potato Salad
INGREDIENTS:
3 russet potatoes
2 tablespoons vegetable oil
1/2 cup chopped onion
2 tablespoons all-purpose flour
1 teaspoon prepared mustard
1/4 teaspoon celery seed
1/3 teaspoon salt
1/2 cup water
2 tablespoons cider vinegar
1/2 cup chopped green bell pepper
1/4 cup shredded carrots
1/2 teaspoon chopped fresh dill weed
1/4 cup grated Parmesan cheese for topping

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 to 20 minutes. Drain and cool. Peel potatoes and slice 1/4 inch thick; set aside.
Heat oil in a medium-size skillet; saute onion until soft. Stir in flour, mustard, celery seed and salt. Gradually add water and vinegar; cook over low heat, stirring constantly, until mixture boils and thickens.
In a mixing bowl, combine the potatoes, green pepper, carrots and dill; add sauce and mix well. Spoon half the mixture into a shallow 8x8 inch baking dish and sprinkle with half the cheese. Cover with remaining potato mixture and cheese.
Bake uncovered at 350 degrees F (175 degrees C) for 15 to 20 minutes, or until cheese is melted and vegetables are heated through.

Cut up a potato and boil about 3 eggs together. After they potatoes get soft cut them off and let them cool down. Peel eggs and put mayo and mustard in with a variety of seasonings. Very good. Maybe even some relish and green onions.

CLASSIC POTATO SALAD

FOR THE DRESSING:
1 cup Hellmann's mayonnaise
2 Tbsp. vinegar
1 1/2 tsp. salt
1 tsp. sugar
1/4 tsp. black pepper
FOR THE SALAD:
6 medium potatoes, peeled, cubed, and cooked
6 hard-boiled eggs, chopped
1 cup sliced celery
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/3 cup chopped gherkin pickles
1/4 cup finely chopped red onion
Combine ingredients for the dressing in a large mixing bowl.
Stir in remaining ingredients for the salad and toss gently but thoroughly to coat with sauce. Cover and chill overnight.

ever try warm german style potato salad ? yummy ! fry some bacon 'til crispy, drain on paper towels and crumble it up, add some salt, pepper, sugar and cider vinegar to the pan and scrape up all the crunchy bits and pour over your boiled potatoes. i like a little diced onion and celery in mine
