It is called "Rice Paper", and believe it or not, you can find almost everything about in on http://www.rice-paper.com/
I personally, however, have made my Japanese sliding doors with
very thin opaque plastic sheets which come in 2 X 4 feet from a building material supplier.
It is quite brittle, but cuts perfectly with a very fine toothed circular saw. It lasts much longer than rice paper, and doesn't become yellow over the years....

I've used Rice Paper which is thin and has a nice translucent quality while still providing privacy if that is necessary. It comes in a wide variety of choices.

This can be purchased in rolls from a local Art store...not too expensive, or in sheets. You can also try a craft store although depending on which you choose it may be more expensive this way.

A specialty paper store might also help but again...art supply is probably going to be the least expensive.
