If you have a small deep fryer at home you can use the pancake batter to make funnel cake. Just get a big funnel and pour the batter in and move your funnel around so that the batter is squiggly when it's going into the oil. When it starts to firm up, flip it over, it should be a golden brown. Take it out and toss it on a bunch of paper towels to get rid of some of the oil, then sprinkle some powdered sugar on top.

It all depends on what you mean by dough, I have made fritters with left over mashed potatoes before, just adding some flour, milk, eggs and spices. Getting it to the consistancy of a pancake batter and proceed.
