This recipe was inspired from Michael Smith. It is a very healthy was to eat your veggies and fish. Can be served with rice or just plain.

24 ounces halibut fillets
2 garlic cloves
1/2 cup red onions
1 carrot
1 red pepper
1 lemon, zest of
1 lemon, juice of
1 tablespoon olive oil
salt
pepper

Preheat oven to 400 degrees.
Julienne garlic, onion, carrot and red pepper. Toss in a bowl with lemon zest, and olive oil
Salt and pepper to taste.
Fold a 16” by 16” piece of parchment paper in half and cut out a large heart shape.
Open the heart and then place some of the veggies along the fold. Place piece of halibut on top of the veggies and sprinkle with a bit of lemon juice.
Fold the other half of the heart over the fish and begin to fold and roll over the edges to create a package. Twist end to seal.
Put on a baking sheet and bake for 15 minutes. This can also be steamed in a pot for about 10 to 15 minutes.

Halibut With Mustard-Caper Sauce

1 1/4 lb. fresh halibut
Kosher salt
Freshly ground pepper
1/4 c. flour
2 T. butter (not margarine)
1/2 c. cream or milk
1 sm. shallot or green onion
1/2 c. Dry Vermouth
1 1/2 T. drained capers
2 tsp. Dijon-style mustard

Melt butter in a large skillet over medium heat. Salt, pepper and flour the fish. Pan fry 1 1/2 to 3 minutes on each side until fish tests done. Arrange on platter and keep warm. Saute onion or shallot until soft and transparent. Add vermouth, capers and mustard. Stir and boil 2-3 minutes, add milk or cream, stirring frequently, cook over med. high heat until sauce reduces and thickens enough to coat spoon lightly. Spoon sauce over fish and serve.


Halibut Orange

Ingredients

(2 servings)

2 lb Halibut, fresh or frozen
1 ea Rind of orange
1 ts Lemon juice
1/8 ts Nutmeg
4 tb Butter
1 ea Juice of orange
1 ea Salt and pepper to taste
1/4 c Minced parsley


Instructions

If halibut is frozen, thaw it. Wrap fish thawed or fresh in a paper towel for a few minutes to remove excess moisture. Place fish in a single layer in large, thickly buttered, microwave safe baking dish. Combine the remaining ingredients, except the parsley, and pour over the fish. Bake at high for 10 to 12 minutes, or until fish flakes easily. Let stand 5 minutes, then remove to a hot serving dish. Pour any sauce remaining in the dish over the fish. Sprinkle with minced parsley and serve.


Baked Halibut Limone
Yield: 6 Servings

Ingredients

3 lb halibut, cut into 6 serving
-pieces,; 3/4 inch thick
1 salt and pepper to taste
1 ts paprika
2 cloves garlic, minced
1/4 c minced fresh parsley
1/2 c seasoned bread crumbs
2 lemons, sliced, plus 2 more
-thinly; sliced for garnish
1 tb butter

Instructions

Preheat oven to 375 degrees. Sprinkle both sides of fish with salt and
pepper and paprika. Place fish in a buttered shallow baking dish and
sprinkle with garlic, parsley and breadcrumbs. Place lemon slices on
fish and add water almost to top of fish.

Bake uncovered 20-30 minutes until fish is firm and crumbs are golden
brown. Remove lemon slices, dot with butter and place under broiler
until browned. Garnish with thin lemon slices. Serves 6


Barbecue Halibut Oriental
Yield: 1 Servings

Ingredients

2 lb halibut
1/4 c orange juice
1/4 c soy sauce
2 tb ketchup
2 tb chopped fresh parsley
2 tb salad oil
1 tb lemon juice
1/2 ts oregano
1/2 ts pepper
1 clove garlic, minced

Instructions

Cut fish into fillets and place in a single layer in a shallow pan.
Combine the remaining ingredients, mix well and pour over the fish.
Marinate for 30 minutes, turning the fillets once or twice to be sure
they are well coated. Grill fish, reserving the sauce to pour over
the fillets before serving.

Make a good Beer Batter, Dip and coat pieces of fish and deep fry. Serve with a Baked Potato with good fresh butter and a good Tartar Sauce for the fish.

I liked it grilled w/a little lemon juice on it then served with a little cup of melted butter to dunk it in. yum
