I love New England Clam Chowder! oooh, but it's kind of fattening with all that cream.. and I am.. ahem... lactose intolerant and i am not about to eat New England Soybean Chowder :-)

Hot sour prawn soup Tom Yum Goong
500g medium raw prawns (pref de-veined)
1 tablespoon oil
2 litres water
2 tablespoons Red Curry Paste
2 tablespoons tamarind puree
2 teaspoons turmeric
1 teaspoon chopped red chillies (optional)
4-6 kaffir lime leaves
2 tablespoons fish sauce
2 tablespoons soft brown sugar
4 tabelspoons lime juice
1/4 cup fresh coriander leaves.
Remove the prawn heads. Peel the prawns, leaving the tails intact. de-vein the prawns.
Heat the oil in a large pan. Add the prawn shells and heads to the pan and cook for 10 minutes over medium-high heat, tossing frequently until the shells and heads are a deep orange.
Add 1 cup water and curry paste to pan. Boil for 5 minutes until reduced slightly. Add the remaining water and simmer for 20 minutes. Drain, reserving the stock (ie, toss away the heads and shells). Return the stock to the pan.
Add the tamarind, turmeric, chillies and lime leaves to the pan. Bring to the boil and cook for 2 minutes. Add the prawns to the pan and cook for 5 minutes, or until the prawns turn pink. Add the fish sauce, lime juice and brown sugar. Toss and serve immediately, sprinkled with coriander leaves.
