Add a little extra Pickle Juice. The vinegar (acid) will increase the pH... thus reducing the activation time of the dagerous micro-organism which create toxins that make you sick. You should be safe for 5 days to a week (stretching it a little)... depending on the temperature of you refrigerator and the way the egg salad smells.

about 3 days till the eggs start to raw with the mayo.

The same as fish 3 days...after that bacteria has gotten too strong a handhold and the food has begun to rot ....even if it looks okay.

I wouldn't let it go much longer than two days because it's going to separate and get all watery and gross.
