You'll be able to pay by travellers cheque, most major credit cards ( they'll automatically convert the currency) and usually USD. It'll be wise to have some cash in Egyptian pounds and piasters. Also, contrary to what someone else here has posted ( I don't think they even know where the Nile is), there usually aren't money exchanges aboard these vessels. They are simply not big enough, you'll find plenty of exchanges in every stop, I did. I did the cruise a number of years back, you'll love it. The Orchid is a little older than most nile cruise ships ( I was on the Champollion, much bigger and more modern), but I recall seeing her at a stop in Edfu and she looked to be well taken care of.
Have fun and soak up all that history.

I cruised the Nile this year. What a wonderful holiday.
On board you will be given a card and everything is charged to it. At the end you can pay on credit cards or any currency you have. You will need Egyptian pound to buy stuff on shore and for tipping. If anybody even moves your case at the airport they will want money. But lovely country and lovely people enjoy yourselves

Usually when you go on a cruise they give you a room card and you pay at the end of the cruise with a credit card, or USD.

These ships ALWAYS have a currency changing facility on-board. They make money from it.
