Are they still legal if they end up hurting the person they’re trying to capture? I wouldn’t think it’s NOT self defense if you are GOING after the person. For example while trying to capture them they pull out a gun on you, you pull out a gun and shoot their hand so they drop the gun, is this still legal even if a person is a Bounty Hunter?

B/c if you are going after the perosn you put your self in that situation, so how can one call that self defense? Wouldn't they get in trouble along with the criminal they are trying to capture?

yes it is self defense if you are trying to capture them ( it is not an arrest, since you are merley taking them into custody on a bail bond) It is often called arrest but not legally considered an arrest.

Next often you are not going to be carrying a gun, you will have mace, maybe a tazor. Some carry guns in states that will allow a private citizen to have a carry permit.

Also some states require that you have a police officer present when you attempt your capture of the person.

I would say you need to learn alot about this entire thing, you don't know enough about this, to even know what you are wanting to do.

Self defense has nohting to do with attempting an arrest or not, you are merely telling them they are under arrest or in custody, if they pull a weapon at that point, you can protect yourself.

Yes! They come get you if they put up your bail. When you don't show in court they have to pay. You are wanted they can do what they want . When they post your bail you sign a paper that says they can use any means to bring you to court!!
