there is a nest in my back yard, and I peeked to look at them and they look like they're dehydrated with their mouths open, is it because they are just hungry? and they look like they're breathing hard. Is there anything I should do to help?

they open their mouths to beg for food. Don't worry, they get moisture from insects their parents feed them..leave them alone they will be fine.
