It costs about 6 dollars canadian to buy one small-medium sized one at the sushi restaurant here :( but they r so tasty..i think they r fried.

Crabs don't grow constantly like we do. They put on mass, then get out of their existing shell and pump up their tissues to get larger and inflate a new, soft shell. They have to absorb calcium and bicarbonate ions to harden the new shell with calcium carbonate. Before they do that, they are softshell crabs. Suppliers keep the crabs in large vats and feed them, then pull them and isolate them when they show signs of molting (shedding shell) so the other crabs won't eat them. This all costs money to do!
