I have a vast quantity of raspberries and would like to make juice for keeping either frozen or in a pantry. Can anyone help?

I'd simmer them as follows;

Equal parts raspberries to water (1 cup to 1 cup - 1 quart to 1 quart - etc.). Once simmering, mash them with a potato masher and cook for 5 -10 minutes to extract the raspberry flavour to the water.

Strain the liquid in a cheesecloth lined strainer, gather the cheesecloth ends together and squeeze until all the juice is extracted.

Re-measure the raspberry liquid and cook it again as follows;
1 part granulated (Castor) sugar to 4 parts juice (or to taste - you may have to experiment to find out how sweet or not you want it).

The unsweetened juice can also be converted into a raspberry spread (seedless jam) if you buy some fruit pectin and follow the directions.

Lastly, you can freeze just the unsweetened juice for later conversion into jam or a juice drink as well. Measure it with a liquid measure cup in one cup quantities into reliable zipper-top freezer-safe bags. Freeze flat on a pan and then slip all the bags into one large bag for extra freezer protection. This will preserve the life of the juice, AND since it's already measured, you will know immediately how much sugar to add or what to do with the juice when you use it at a later date since you've done all the work now!

One last use for this unsweetened juice; add a half cup of it to a pitcher of freshly made lemonade or cold, sweetened Ice-tea for a phenomenal summer drink!

you first need to mush them up, and strain through cheescloth to remove the seeds, you can add sugar or not. I would just freeze it then in jars..just don't fill too full, allow for expansion. Raspberries are yummy
