Myclonus (the scientific name) is cause from involuntary muscle contractions. When falling asleep, your body begins to relax, causing an altered reflex. It is a common occurrence for people and generally needs no treatment. Read more about it at :

I am not a doctor but, I have had experience with your "jumping" while falling asleep. If it is your legs that are jumping, feeling uncomfortable, weird or you feel the need to get up and walk around , you may be suffering from restless legs syndrome. there is over the counter medication, prescription medication and I know my friend drinks tonic water because of the quinine content which is suppose to help with the jumping. If you hear a noise, even subconciously when you are entering the REM stages of sleep, it is as if you are awake and hear a loud noise. When entering into REM your entire body is at rest, muscles included and it is like jumping into a pool of ice water when it is 95 degrees outside. However, if it is just your legs that jerk, it could be restless leg syndrome.
