Rigatoni Alla Carbonara
Ingredients
(4 servings)
3 oz Pancetta
1/4 c Chopped onion
1 sm Dried red chile
3 tb Butter
3 tb Olive oil
4 Eggs
1/2 c Grated Parmesan cheese
1/2 c Grated pecorino
1 tb Salt
1/2 ts Salt
Freshly ground black pepper
1 tb Chopped parsley
1 lb Imported Italian spaghetti
Instructions
FINELY DICE THE PANCETTA and saute it gently with the onion and chile in the butter and olive oil until pancetta is rendered and the onion soft, about 10 minutes. Discard chile. Beat the eggs with the 2 cheeses, 1/2 teaspoon salt, several grindings of black pepper and the parsley. Bring 4-to-5 quarts of water to the boil. Add 1 tablespoon salt and put in the pasta. When pasta is still slightly underdone, drain it and add it to the pan with the pancetta. Over low heat, toss thoroughly to coat the pasta with the oil and butter. Off heat, stir in the egg-cheese mixture and toss vigorously. Serve at once.

lets see carbonara ... Ingredients: bacon , egg yolks, spaghetti, cayenne, parmegian cheese, heavy creme and plenty of fresh crushed garlic... fry a couple of slices of bacon and boil the spaghetti-- break up bacon into bits, seperate one egg yolk( per person eating) from the white, place yolk(s) in a bowl, remove boiled spaghetti from heat drain water and place back in the same hot pan,,, stir into the steaming hot pasta, the egg yolk(s) bacon bits, garlic, plenty of parmegian cheese and 2 or 3 good shots of cayenne add the heavy creme last , the heat from the cooked spaghetti is what cooks the sauce so make sure you add ingredients as soon as you drain the water,..... this is a very simple , fast and easy carbonara... which you can modify to suit your tastes as many romans did.... for example you can cook some bay scallops(the small ones) in wine and garlic and add them to the pasta while hot.... yummy to my tummy try it you'll like it

In a pan fry off smoked bacon, chopped onions and garlic. Put them in a dish. In the same pan, boil your spaghetti. When it's done, after 8 minutes usually, drain it. Put it back in the pan with a good sized knob of butter and the bacon mixture. Add finely grated hard cheese and milk and stir until the butter and cheese melt into the milk to make a suace to coat the spaghetti. If it's too sticky, add more milk, if it's too loose add more cheese. When it's done, pour a beaten egg over the mixture. Ecco.
