Grilled chicken & baked potato topped with broccoli & cheese. Get some Mr. Yoshida's marinating teriyaki sauce, mince up a garlic clove (or two) and and put the two ingredients in a baggie with a couple chicken breasts.

If you want it a bit sweeter, get a small can of crushed pineapple, (drain the juice into a separate bowl and put aside) and put half the pineapple into the baggie also. Mix/smush the ingredients together and let them sit in the fridge for a couple of hours.

Start up the grill, grab a couple potatoes (clean and soak them in water for a couple minutes), fork-poke 'em, cover them with a little bit of olive oil and wrap them in foil.

Throw those puppies on the grill for a while and while you're waiting, pull out the chicken and put on the counter, then chop up some broccoli & boil until fork-tender to tender. Be sure to blanch them (soak in ice water) for 30 seconds to a minute to keep the green color and then drain and cover them to keep what bit of warmth is left with them. When the potatoes get near the end (about 1 hour for a medium size) throw the chicken on the grill and cook to desired doneness.

If you put in the pineapple chunks, you can make a good sauce to baste the chicken with as it grills: in a food processor, put in the other half of the pineapple, a tablespoon of the reserved juice, half a tablespoon of sugar, one cup of the Mr. Yoshida's teriyaki sauce and 1 garlic clove and blend together. You can baste that onto the chicken with a baking/grill brush to keep it moist and flavorful as it grills. Or if you just did the plain sauce you can baste it a bit with that too.

Once the chicken is done, assemble the baked potato: cut it lengthwise and squeeze to open the center. Dab in a bit of butter and if desired a dollop of sour cream. Top with some of the broccoli and sprinkle with finely grated cheese (I like the store-bought fine grated four cheese blends). The heat from the baked potato and a bit from the broccoli will make the cheese melt a bit. Serve with the chicken and a salad if desired.

Since it is going to be 95 with heat indexes over 100 where I am at, the wife and I are going to nuke some bacon and have chicken and bacon club sandwiches with cool vegetables. We are not going to get the oven going! I would suggest you either prepare something that cool, or go out to dinner at an air conditioned restaurant. I would not ordering recommend pizza, because, it this heat, the cheese has a tendency to stick to the top of the box.
