Ninfa's or Los Cucos in the Houston area (Mexican food). They both have several types of mixed plates most below $7.
I'm sure the area where you live has some great local BBQ places. In Houston try Demeris BBQ.
Houston also has some great Chinese/Vietnamese places with inexpensive lunch menus.

There are lots of places to eat in Texas, it just depends on where you are. I like Quiznoes and Subway. Alamo Cafe (near San Antonio)

I went to Dallas 2 yrs ago and ate at Dickey's BBQ...omg the BEST BBQ Ive ever had... the atmosphere was great and the bill was quite LOW....I loved it!!
