Greek Ribs Recipe
. Cook time does not include 8 to 24 hour marinade time.
3 lbs pork back ribs
2 teaspoons finely grated fresh lemon rind
1/3 cup lemon juice
1/4 cup grated onions
2 tablespoons dried oregano
2 tablespoons vegetable oil
2 teaspoons liquid honey
3/4 teaspoon garlic powder
3/4 teaspoon salt
1/2 teaspoon pepper
6 servings

1. Cut pork into individual ribs, trimming off fat.
2. In small bowl, whisk together lemon rind and juice,onion,oregano,oil,honey,garlic powder,salt and pepper; pour into large plastic bag.
3. Add pork ribs, turning to coat; seal bag tightly.
4. Refrigerate, turning bag occasionally, for at least 8 hours or for up to 24 hours.
5. Arrange ribs on rack in large foil-lined roasting pan; pour marinade all over ribs.
6. Roast in 400F oven for 10 mins.
7. Reduce oven temp to 375F; roast, turning once and basting occasionally with marinade, for 1 hour or until meat is tender enough to almost fall off bone.

Combine butter and garlic. Rub garlic mixture on both sides of ribs. Squeeze fresh lemon juice all over ribs. Sprinkle oregano all over ribs. Place in oven. Bake at 350 F for 45 minutes to 1 hour. Baste lemon juice over meat several times during baking and just before serving. Makes excellent finger food! Serves 4.

Greeks style ribs

Ingredients:
2 Racks of baby back ribs
1 teaspoon Seasoning Salt
1 teaspoon Pepper
1 teaspoon Salt
1 teaspoon Oregano
1/2 cup Cup lemon juice


Directions:

1. Combine all ingredients in a 13x9" baking pan. 2. Preheat oven to 400F, and cover pan with Tin Foil. 3. Cook for 1 1/2 to 2 Hours. 4. When completed, remove ribs and grill on barbecue. Baste with olive oil, lemon and oregano while on barbecue. 5. It isn't necessary to barbecue, but it adds a nice flavor, and gives the ribs a nice color.

This is a recipe that I developed myself, is real easy to do and works well either in conventional oven or on a charcoal barbeque in the summer time!! Because I do not follow a specific recipe, I have estimated the amounts to be able to post this recipe. All of these ingredients can be adjusted to your own tastes.
2 racks of baby-back pork ribs
4 tablespoons melted butter or margarine
4 tablespoons italian seasoning
2 tablespoons garlic salt or garlic powder
2 tablespoons seasoning salt
2 tablespoons onion salt
