Grilled Cheese Sandwich:

The oldest diner sandwich in the book becomes a great summer meal when you make it live up to its name—cook it on the grill. Prep and cook time: about 15 minutes.

8 slices rye bread (about 10 oz. total)
About 8 ounces cheddar cheese, thinly sliced
1 firm-ripe tomato (about 6 oz.), rinsed, cored, and thinly sliced
1/2 sweet onion (about 4 oz.), thinly sliced and separated into rings
About 2 tablespoons olive oil

1. For each sandwich, top a slice of bread with a thin layer of cheese, two tomato slices, a few rings of onion, and more cheese. Top with a second slice of bread. Brush both sides of the sandwich lightly with olive oil, then push two or three toothpicks all the way through the sandwich to secure.

2. Lay sandwiches over medium heat on a gas grill (you can hold your hand at grill level only 4 to 5 seconds); close lid. Cook, turning to prevent bread from scorching (remove toothpicks when turning, if they catch on the grill), until sandwiches are well browned on both sides, with some darker grill marks in spots, and cheese is melted, 8 to 10 minutes total. Serve hot, while cheese is still melted.

Yield: Makes 4 sandwiches (serving size: 1 sandwich)

Butter two pieces of bread(white or wheat), get dry non stick skillet med hot, Place a piece of american cheese or cheddar between the unbuttered sides of bread. Put together to make sandwich and put in hot skillet. Check bottom and if golden brown, turn and press other side with spatula, cook until that side is brown and cheese melted. You can also place a thin slice of ham on the cheese if desired and this willl make a grilled ham and cheese sandwich. Serve with your favorite pickle

Butter the outside of 2 pieces of wheat bread. Put 2 slices of american cheese inside the bread. Put sandwich on a hot skillet, about 2-3 minutes on each side, just until the bread starts to brown and get crunchy. When done, set the sandwich onto a plate and let cool for a minute then slice diagonaly and enjoy.

Cut the edges off two pieces of your favorite bread. (This prevents the edges from burning while browning the bread.)

Butter the bread on all four sides.

Add your favorite cheese. You may wish to use a combination of cheeses. Experiment a bit.

Place the bread on skillet (pan) ON MEDIUM HEAT.

Brown the bread to the desired darkness checking often so that it won't burn.

Turn the bread when done and repeat.

For a change, you may use olive oil (extra virgin) and add some spices (basil is nice) or add some other ingredients (relish) to the middle for added flavour.

Enjoy with your favorite beverage, (mine's a cold glass of milk)

This is how you make a real grilled cheese sandwich:

1) Take two slices of your favorite bread, spread butter on each slice.

2) Slice cheddar cheese (Cracker Barrel is best) however much cheese you want.

3) Heat a frying pan over medium heat, add the two slices of bread- butter side face down. Arrange cheese slices on one slice of bread. I like to sprinkle a little garlic salt on mine. Place lid on frying pan to help melt cheese faster. (Here's a variation: place half the cheese on one slice of bread, half the cheese on the other piece; add a few thinly sliced tomatoes).

4) When the cheese is melted, take a pancake spatula and flip one piece of bread on top of the other piece to make a sandwich.

5) Make sure bread is nice and golden on each side.

Best served with creamy tomato soup.

THE ultimate comfort food!

Take 2 slices of bread (wheat is the best)

Put a couple of slices of american cheese between them.

In a griddle or frying pan with oil, grill it until the bread is golden brown and the cheese is melted.
