mmm ok, use some eggs to wet the zuchinni, then coat em in flour, egg them again then coat with bread crumbs. Then deep fry it. I usually use a cold vegetable dip...taste so amazing,,

Use flour with pepper and garlic powder and a little salt in it. Mix up a egg in a separate bowl. Peel the skin off the zuchinni and then slice it in thin slices. Dip each piece in the egg then in the flour mixture, then put in hot oil. The garlic powder is the key though.

Zuchini Fritters
A great veggie fritter recipe I found from Italian Cooking and Living.
2 eggs
1 tablespoon flour
2 tablespoons milk
1/2 cup parmesan cheese
1 lemon, zest of
salt and pepper
2 tablespoons fresh parsley
4 fresh zucchini (grated)
vegetable oil
6 servings

1. Combine the eggs, flour, milk, Parmesan and lemon zest.Season with salt and pepper and add parsley mixing well.
2. Add the zucchini and set aside.
3. Warm the oil and place spoonfuls of zucchini batterin the oil until nice and golden.
4. Do this in batches so you do not lower the temp in your oil.
5. Carefully remove from oil your finished zuch's and drain on paper towels.

Fried Zucchini Coins

1/2 cup cornmeal
1/4 cup all-purpose flour
1 teaspoon dried basil
1 teaspoon kosher salt, plus for seasoning
1/4 teaspoon cayenne
Freshly ground black pepper
2 large eggs, slightly beaten
Vegetable oil, for shallow frying
2 small zucchini, sliced into 1/8 to 1/4-inch thick coins
Line a dish with paper towels and set aside. Whisk the cornmeal, flour, basil, salt, cayenne, and pepper in a bowl.
Beat the eggs in another bowl.
Heat 1/4-inch vegetable oil in a skillet over medium heat until hot but not smoking.
Working in small batches, toss the zucchini coins in the eggs, then coat in the cornmeal mixture to cover completely. Carefully drop the zucchini into the oil, and fry until golden brown, about 2 minutes on each side or until crisp. Remove from the oil with a slotted spoon and place on the prepared plate. Season with salt, cool slightly and serve.

Note: I layer the zukini in a collinder and put a layer of saltin between each zukini layer and let the salt draw out the excess water from the zukini coines before I batter and fry them.

also I dont use eggs but add water to the flour mixture till it is like a pancake batter to coat the zukini in, it is very delicious that way.

MAGDALINAS VALENTINE CHICKEN

4 boneless skinless chicken breast
2 cans Campbell's condensed golden cream of mushroom soup
1/4 chopped yellow onion
milk (1) one soup can's amount

flour seasoned with garlic powder, season salt, pepper, and (dill weed) optional.

Season and flour 4 chicken breasts and fry in skillet with vegetable oil till done.

Drain and remove excess grease from skillet.

Combine chopped onion, milk, Campbell's condensed golden cream of mushroom soup, 2 tbsp of seasoned flour in skillet with cooked chicken breasts.

Simmer on medium heat till onions are soft.

Yeah add a little red pepper sauce to the batter. Not too much though you still want to taste the zuccini. I use the "Louisiana" brand.

don't deep fry it. You should bake it with cheese. That is delicious.

buy tempur mix and make according to directions. so good!
