Yeah, my roommates love my fried rice with egg.
Ingredients Needed : Oil, Garlic, Eggs, Cooked Rice, (Chinese) Light Soy Sauce, Oyster Sauce.
1. Chop garlic into tiny pieces. (I use about 2 pieces per serving, I use a lot, adding garlic really makes it smell GOOD!)
2. Heat Pan.
3. Pour oil. (Use discretion, 1-2 tablespoon per person).
4. When oil is hot, put in the garlic, saute.
5. See that garlic is just crisp, not yet golden.
6. Set garlic aside the pan, crack eggs (1-2 for each person), fry eggs till they're 60% cooked--semi-solid state.
(*** Important: Make sure the egg is cooked about 60%. If uncooked, the egg will coat the rice and rice will turn yellow, and you won't see the egg bits. If over-cooked, eggs will not taste good).
7. Add rice, stir rice well into the combination.
8. Add Light Soy Sauce (again, use discretion, 1-2 table spoon per person, eye-ball the amount.)
9. Add Oyster Sauce (Important: Don't use too much, it'll spoil the taste.)
10. Mix everything well, make sure the sauces coat every grain of rice. Serve!
You don't have to add Oyster sauce if you don't have it. It can make or break the dish. Don't add too much. About 1/2 tablespoon for each person.
You can also add other stuff like red/green pepper, carrots, peas, shrimps, chicken, pork, beef. If you do, you can fry them separately,add some flavor, then mix them into the fried rice toward the end.
Try out the dish a few times. It's really easy and soon you'll get the hang of it.

Fried rice is actually pretty easy to prepare.
First, pick the ingredients you want in your fried rice... it could be as simple as some eggs and some green onions. You could choose to add green bell peppers, shrimp, or any other things you like.
Here's my simple recipe. (serving size: 2)
1. Prepare some rice and leave them out until they are cold (usually overnight).
2. Chop some green onions (1/4 cup).
3.. Take two eggs and mix them.
4. Heat up the wok and add three teaspoons of cooking oil.
5. Toss in the two rice bowls of rice first and flip it several times until each grain of rice is not stuck together (usually takes no more than 8 minutes).
5. Add in 1/4 cup of soy sauce and 1 1/2 tablespoons of salt. Mix well.
6. Add in the egg batter and just flip the rice several times in the wok until the rice turns a nice golden yellow.
7. Add in the onions and just mix it with the rice for about 30 seconds.
Voila... simple. It doesn't take very long and if you want to add extra ingredients... just add them before you add the egg batter and the flavoring.

The secret of great fried rice is to boil or steam the rice before hand until it is just cooked. Then let it cool and spread it out on a shallow dish like a baking pan and leave it uncoverd in the refrigerator at least 3 hours or overnight. This gives it a great texture. Long grain rice fries better (I prefer brown long grain),
Fry quickly use not too much of a light oil. mung been shoots, green onions are a necessity. You can add cooked shrimp, cooked chicken , bacon, peas , carrot, and top with pre fried stirred up egg. I like indonesian sweet soy sauce with mine

Here's a fast and easy way: Cook 1 1/3 cups minute rice using 1 cup water. Meanwhile, chop 1/4 to1/3 cup onion, saute in 3 Tbsp. butter, add one egg and stir till partially cooked, then add the rice which should be done by now. Stir and fry for a couple of minutes. Add 1-2 Tbsp. soy sauce to 1/3 C water and add to rice. Stir til absorbed.
I found this recipe years ago on a minute rice box, and it makes really great fried rice. Doesn't call for any peas or other veggies, but you could always add them if you want.

Mmm...fried rice. Cook the rice first, drain. Place rice in oil in frying pan, add soy sauce, not too much, a few tablespoons is usually enough. Result: Deliciousness.

Cook the rice first then allow it to cool and refridgerate overnight. Then it is ready for frying, am a vegetarian so don't know what ingredients you want. Just make sure the rice is cooked well and the end result will be much better.

Half boil rice and keep them aside.In a wok put three table spoon of vegetable oil and fry square sliced carrots, cauliflower flowers,sliced onion,sliced spring onion , cut cabbage, boiled chicken pieces till they become tender.Add salt and red chili powder.Now add half boiled rice and fry them on low heat for about ten minutes,garnish with nuts if desired

This has the flavor those other recipes are missing. Tastes like take-out. I want to dedicate this dish to Bergy, whose recipe, "AM & B's Indonesian Mehoon", has inspired this dish.
3/4 cup finely chopped onions
2 1/2 tablespoons oil
1 egg, lightly beaten
3 drops soy sauce
3 drops sesame oil
8 ounces cooked lean boneless pork or chickens, chopped
1/2 cup finely chopped carrots (very small)
1/2 cup frozen peas, thawed
4 cups cold cooked rice, grains separated (preferably medium grain)
4 green onions, chopped
2 cups bean sprouts
2 tablespoons light soy sauce
4 servings Change size or US/metric
Change to: servings US Metric
28 minutes 10 mins prep

Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.
Allow wok to cool slightly.
Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.
Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.
Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.
Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.
Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.
Set out additional soy sauce on the table, if desired.
