Their brains haven't evolved. Relatively speaking.

There are around 5 billion people in the world. An extremely small percentage of these are interested in science in the hardcore academic sense. An extremely large percentage of persons aspire to religion as a major factor in their lives. A non-religious English major without science interest is not likely to bother learning to grasp relativity. A Christian who is interested in physics, of which there are probably just as many as atheists, relative to population distribution, is likely to develop a grasp of relativity.
Perhaps your perception that causes you to ask such a question is due to your heretofore absence of exposure to large enough populations and controls to come to a scientifically based conclusion.
By the way, which relativity? General or special? What do you understand of relativity more than your hypothetical religious group who can't grasp the concept of relativity? If you grasp the reality of God, you might note that it is He who created a universe in which relativity operates. What are religious people? People who have religion or people who are religiously narrow-minded and prone to generalizing about other people? Why do people assume those with whom they disagree have lesser intellectual abililty simply because their interests differ?
People who don't grasp the concept of relativity usually are not interested in it and would rather use their brains in other ways, whether religious thought, art, parenting, or finding clever ways to get out of doing homework.

Just curious, who are these religious people you are making reference to? Then what do you mean by the term religious people? What is reality? Is it as it is or is it as you see it?
In my reading it seems you left too many questions undefined to receive in return a simple answer.
Please clear this up so I can consider what you are asking.

Maybe because it keeps changing. Quantum physicist readily admit that Einsteins model does not work as is. They are still trying to adjust and come up with something that might hold up. Until they do, I wouldn't point to many fingers

surely, there is not any solid reason to think that they couldn't. they look to regularly have problem with the idea of evolution, notwithstanding, notwitstanding that that theory is now nicely favourite.
